Pancakes for dinner?

Occasionally for dinner we will have pancakes. A couple of months ago we both really wanted pancakes but when we went into the pantry we didn’t have enough of the mix to make a full batch for the two of us. I had never made pancakes from scratch but I figured, how hard could it be? I went straight to Google and typed in pancake recipes. It gave me a whole slew of them including whole wheat pancakes. Turns out making pancakes from scratch is SUPER simple and tastes even BETTER than the mix.

This is the easiest and tastiest recipe I have found: ( I usually half this recipe for just 2 people.)

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs, well beaten
  • 2 cups milk
  • 2 tablespoons vegetable oil

Stir together dry ingredients. Add eggs, milk, and oil. Stir until dry ingredients are moistened (batter may be lumpy). Cook on preheated griddle until bubbles form and edges start to dry. Add any fruit or topping you’d like. (I love blueberries, bananas, strawberries, or of course chocolate chips!) Flip and cook until lightly browned.

I recently switched to whole wheat pancakes and to my surprise I like them better than regular ones!
