Whole Wheat Pasta with Tomato & Mozzarella Sausage

Today I have Parent Teacher Conferences, which means I’ll be at work for at least 12 hours….YUCK! It’s only 2x a year, so I really shouldn’t complain, considering most people work way more hours than I do on a regular basis. Monday was a crazy day at school, so I was tired when I got home, so I wanted to make a quick dinner. (Actually, most nights I want to make a quick dinner.) Over the weekend Danny and I took my Aunt Millie (whose 93) to this little local store that has meats, cold cuts and fresh fruits and veges. We saw some tomato and mozzarella chicken sausage so we bought 1/2 pound. I knew I wanted to do something with that and when I opened the freezer and I saw (frozen) fresh whole wheat pasta I knew what I was going to make.


This was my pre-dinner snack…hope Danny didn’t want any…

I browned chopped garlic in the pan first and then threw in the sausage and also browned that one both sides for about 3-5 minutes each. I chopped up yellow and green squash really small (so Danny wouldn’t be able to pick it out).
I used my new (old) chopper. I usually am too lazy to get it out, but today I gave it a whirl..and it really does make life easier!
I also chopped up mushrooms and put in half a can of drained and rinsed cannelloni beans. Then I threw in a big can of diced tomatoes and mixed it all up. I added a sprinkle of sea salt, black pepper, basil and oregano.


When it was done it looked like this! I love grated cheese, so I added it throughout eating this! Fresh whole wheat pasta makes SUCH a difference in the taste. It is SO much better than the boxed version.

Before I started cooking I did a workout on demand called Rock Hard Total Body. It KICKED my BUTT! It was kind of like a Jillian Michaels workout, but it combined strength and cardio. It was only 42 minutes long (it has a countdown clock in the corner, which I love!). By the end of it I was begging for it to be over. I liked it because it was 42 minutes of all work, some of the on demand videos say they are 42 minutes and have like a 5 minute warm up and 10 minute cool down. This lived up to its name and was HARD!

That looks so good ! I'm glad Aunt Mil made a cameo as well !! =] Nothing like fresh ingredients !
