Stuffed Peppers!

After a wonderful birthday, today is going to be boring! Thank you to everyone who made my birthday very special by leaving me messages or cards or both! Yesterday was great. My class threw me a "surprise" party, which always is adorable. They wrote me cute cards and were just as excited as I was ( if not more....).

When I got home I made a homemade pizza (pictures to follow). Again, that bread maker was put to work to make a quick pizza dough in 1 hour 40 minutes. Danny came home with Tasti D'Lite for me and flowers (what a guy). So after dinner I camped out on the couch and caught up with Desperate Housewives and Brothers & Sisters.
I have another Thanksgiving recipe to share that I make pretty often for Danny and I. I made stuffed peppers with the green sweet peppers. I barely had walked into Thanksgiving dinner at my Mom's before they were all gone. They are super easy and quick to make.
Ingredients:
3 slices fresh whole wheat bread (or about 1 cup breadcrumbs)
1/2 cup grated cheese ( I like pecorino romano)
1/4 cup part skim mozzarella
1/2 tsp, salt and pepper
1 tsp parsley
1 tsp basil
6-8 green sweet peppers
1 clove, chopped garlic
Mix all ingredients together and spoon into peppers. Bake in a preheated 350 degree over for about 30 minutes.
YUM! This is a great appetizer or side dish for any party, or just simply for dinner!
