Meatless Meal? Try Spelt Burgers!

Coffee and a juice, what a way to start the day right?? 
Juice today was 1 pear, 1/2 lemon, small piece of ginger, handful of spinach, 1/2 beet and 1.5 carrots

Does anyone look forward to waking up and drinking some coffee as much as me? I don't know if there is anyone that does. Yesterday I didn't get to drink all of my coffee because I am administering the NY state math exam and I cannot bring any drinks to the test.  So this morning I am enjoying a cup before I go to work, so I get my fix!


Yesterday I came home and did some much needed yoga. I hopped on my favorite yogadownload.com and did an hour of Yoga Detox.  I just love how an hour of yoga totally clears my mind and relieves stress. It really doesn't matter how much or how little of it you can do, just breathing and stretching out makes me feel so much better. I have been working on my crow and holding it maybe even half a second longer....exciting right?? Speaking of yoga...has anyone checked out the yoga challenge this month yet? My day is next week to host it!


Before I post a recipe for the day I just have to say something about negative comments. I was reading Averie's blog last night and she was talking about some of the negative comments she gets. I really don't understand why anyone would post comments that are so mean and clearly hurting someone's feelings. People who write blogs put themselves out there and yes, maybe they make themselves vulnerable, but why would someone intentionally be mean? I just don't understand because I really feel like it takes so much more effort to say something not nice than to say nothing at all. If you don't like what someone is writing about, why not just close the blog and not read it at all? Why be mean? Okay, I'm done ranting, I just feel for the people who receive negative comments, when it takes A LOT of effort and time to write a blog!


On to my recipe....


After making Angela's life changing nut butter fries many times now, I knew I needed to try her spelt burgers. I was trying to find something for dinner and I remember these. I wasn't sure if Danny would like it, but I knew he could always have a PB sandwich if he hated them. 


I didn't have some of the ingredients that Angela used, so I had to wing it a little bit. 
I threw in carrots, swiss chard, 1/2 red onion, chick peas.
All mixed together.
with the flour, chia seeds and sunflower seeds added.
molded into patties (I don't really like the word patties...anyone else?)

Ingredients:
  • 1 cup cooked chick peas 
  • 1 small carrot, peeled and chopped 
  • 1/2 red onion, chopped
  • 1/4 cup swiss chard
  • 1/2 t dried basil
  • 1/4 t fine grain sea salt
  • tiny dash of cayenne
  • 1 clove minced garlic, optional
  • 1/4 cup sunflower seeds
  • 1 T chia seeds (can be omitted)
  • 1/2 cup spelt flour (or flour of your choice)
  • 1/4 cup millet flour
Preheat oven to 375F.  Line a baking sheet with parchment paper (or spray with oil). Place all ingredients except the seeds and flour into a food processor. Process until mixture is blended. Remove mixture and place into a large bowl. Add chia and sunflower seeds, then add the flours. Shape into burgers (6-8) and bake for 15 mins at 375F, flip over and bake for another 10 minutes.
These are perfect wrapped in lettuce, swiss chard, a wrap or on crackers or bread. They also are great topped with some balsamic dressing. BTW, Danny LOVED them. I was instructed not to tell him anything that was in them...ever. I love these burgers because you can make them with any type of bean, seed or flour. They are totally customizable!
Okay, off to day 2 of testing and to drink the rest of my coffee!!

I'm with you on the negative comments thing. Luckily, I haven't had to deal with that - but it makes me so upset when I see these amazingly talented individuals saying that they do. Like, really, people?! Some people just WANT to be hurtful because they are too caught up in their OWN insecurities, and want to bring others down with them. It's hard to ignore, but the best thing to do is just NOT acknowledge them, I think. I hope you haven't had to deal with any negativity, lady :)
These burgers look great - I actually printed off the recipe to store in my binder a while back, but haven't tried them yet. My family and I are too hooked on those Moosewoods burgers! I love the idea of the sunflower seeds, though - I think I'm going to add some when I make the burgers for Mother's Day this Sunday - my mom's request! I didn't complain ;)

These sound so good! I love veggie burgers, so I'm happy to know that I can make them at home. They sound so healthy, and I'm sure they're delicious!

I haven't had any truly negative comments yet (knock on wood), but I hate when I see it on other blogs. If you don't like what someone has to say, don't read it. It is as simple as that.

And I am with you on the coffee... drinking one now in fact LOL.

I am so with you on the hurtful comments. I love Averie's blog too! I just don't get it. Yes, I have to have my coffee. I work out first thing in the morning...then, it is coffee time! Then oatmeal. There is a method here to my happiness. I love making burgers out of anything and everything. The more sneaky protein and veggies...the better. Your dish looks yummy. I made Jess's smore's brownies not too long ago. Very tasty and dangerous to have around!

I've seen so many people give these burgers rave reviews; I can't wait to try them!! I haven't tried any blogger recipes lately (shame on me, I need to get on that!) but I have bought countless things that I've seen on blogs! Chia seeds were my latest purchase. Love 'em!

These look really good, I love all your healthy foods, your an inspiration. I haven't done yoga in a while cause the little one jumps on me in poses and it hurts! I am theankful I haven't had to do deal with negative comments yet, a few were a little blunt, but I don't care about that. I much rather people were truthful than anything. I hope you haven't had to deal with the negativity either, I don't know what anyone could say here that is negative.

Thank you so very much, Nicole, for bringing awareness to this matter of ppl going around leaving neg and rude comments. It's my version of 21st century bullying. It's like they should just not read. And even if they totally disagree or think it's just way out there, then just click off the page. Dont take the time to write something nasty...but hey, that's just me :) Thank you so much for mentioning this...and for your support and friendship, I truly appreciate it!

As for the burgers, spelt has gluten so not for me but seriously your food photography on these is outstanding. Plus your new layout (love it more all the time!) just showcases the beauty of the food, too!
