Morning! How are you all? I hope you enjoyed the video my sister made for us. She surprised us with it last night when she sent it to us. She literally got every wedding thing we did on camera, which was really funny to look back on over the summer. You forget how crazed you were with wedding things. My mom’s house literally was filled with wedding supplies to the brim.
Thank you to all of those motivating words you sent me through my comments and twitter. It got me up off of the couch. It was a very dreary day on Tuesday and it was hard to get up. I kept waiting and waiting and then finally after some spring rolls (and digestion) I got up to go. I was a bit weary of the weather so I just ran about a one mile loop around my apartment and did it 4.5 times and then walked the other .5. It was a good thing I stayed close because I’m sure if I ran to the park it would have down poured. Some of you asked for my new play list, so here it is! I just threw it on shuffle and went. It did get a little boring running in circles, but it did te trick.
Yesterday I did a Dave Farmar yoga podcast. Does anyone else do those? I love how he travels to different locations and does yoga seminars. There is one in Westerly, RI next summer, I want to go! I can really feel it in my legs today from all of those intense poses that make my legs SHAKE.
After that I did my typical drive to LI, picked up an iced coffee and watched TrueBlood. Another thing I recently got hooked on. I just finished season 1, but have simultaneously been watching season 3 and need to watch season 2 now. Then my sister and I went to Whole Foods to pick up stuff for dinner and the mall. I needed moisturizer from Bare Essentials and a spray I use from MAC (makeup). We didn’t get much, but it took awhile.
By the time we got home we were ready for dinner. It was time to make chicken and veggie enchiladas. I couldn’t find enchilada sauce at Whole Foods (I even asked) so I picked up chipotle salsa, which turned out to be spicy. I mixed it with a big jar of salsa and one can stewed tomatoes and it turned down the heat a little bit.
based on Tyler Florence’s Recipe Ingredients Preheat oven to 350 degrees. Coat large saute pan with oil. Cook chicken over medium heat, keep turning chicken until cooked, about 10 minutes. Sprinkle chicken with cumin, garlic powder, cayenne pepper, salt and pepper before turning. When cooked add corn, beans and 1/2 can of stewed tomatoes. Mix until heated through. While chicken is heating combine both salsas and remainder of stewed tomatoes. Line platter you will be using with one large spoonful of salsa mixture to coat the bottom so tortillas don’t stick. When chicken is heated, microwave each tortilla for about 10 seconds, so they warm and are more flexible. Add one piece of chicken and some beans and corn to the middle of tortilla. Roll sides in and place tortilla seem side down on platter. Repeat until done with tortillas. Spoon remainder of salsa mixture on top of tortillas. Add cheese to the top. Bake in the oven for about 15 minutes.
Based on recipe by Gina the Fitnessista Ingredients Pre-heat oven to 350 degrees. Saute veggies in 1 tbsp olive oil on medium heat. Season with season with cumin, garlic, cayenne, salt and pepper. Add the black beans, corn and half can stewed tomatoes, heat through. Mix and taste. Combine both salsas and remainder of stewed tomatoes. Line platter you will be using with one large spoonful of salsa mixture to coat the bottom so tortillas don’t stick.When veggies are heated, microwave each tortilla for about 10 seconds, so they warm and are more flexible. Add veggie mixture to the middle of tortilla. Roll sides in and place tortilla seem side down on platter. Repeat until done with tortillas. Spoon remainder of salsa mixture on top of tortillas. Add cheese to the top. Bake in the oven for about 15 minutes.
This is a VERY filling, healthy dinner! I’m off to SoulCycle bands class! What are you doing to workout today?

Glad to hear you got out for a bit yesterday. I was the same, wanted to veg out but got a short run in and felt all the better for it.

I’m hoping to squeeze in a run after work, but it’s going to be a REAL squeeze if I can manage!! I’m mentally DONE with traveling… can’t wait to be home and back to my normal workout schedule!
