Melted Brie with Raspberry Preserves

So I forgot to share with you what I woke up to Sunday morning….

I think I’ve shared with you my squirrel story and if I haven’t the short of it is that last school year I was sitting on my couch drinking coffee before work…which almost never happens. I never have time in the morning to sit because I am either sleeping until the last second possible, or working out. Anyway, I was relaxing for 5 minutes when I see out of the corner of my eye and squirrel on my fire escape. I didn’t think anything of it, but then it seemed to be getting closer and closer until it came in. My window was apparently cracked and it snuck in. Then another one appeared out of nowhere…to make a long story short, coffee went everywhere, I screamed, husband came soaking wet out of shower and somehow got squirrels out. SCARY.

Fast forward to last Sunday. I will be the first to admit, we should have taken in the soil filled pot that was outside our window, but we didn’t. I opened the curtains Sunday to water the basil plant (that’s inside) when a furry creature was staring back at me in a giant pile of leaves and branches on my fire escape. You can imagine by now I HATE squirrels so I scream (again) wake husband up and we tried to figure out what to do. Well, it’s gone. Danny got rid of it with a broom without hurting any squirrels. Now our windows will be cemented shut until I feel better opening them, you can bet it won’t ever be when I’m home alone.

That might look small, but really it took up 1/2 of the fire escape. GROSS.

So what did I do when I was still shaken up later in the day because I envisioned squirrels taking over my apartment???

I made cheesy, delicious, melty brie.

*By the way, I forgot to cut the rind off the top of the brie. Don’t forget. Make sure you do that.

I’m off to work and a possible manicure later on. Anyone have any fall favorite colors??

I loooove brie. Seriously I could eat an entire wheel of it. Especially with jam. Yum.

What Jessica said. Except I don’t even need jam to eat an entire wheel of brie hehe. My favorite fall color is eggplant purple!

Squirrels really are creepy… glad you got rid of them for now!

I made something similar to this two weeks ago with apricot preserves and crushed almonds sprinkled on top. I bet raspberry would be amazing too!

LOL at the squirrel story. I have one too! When I was a kid, a baby squirrel followed me 3 blocks home…like literally followed me, I was like 10 and didn’t know better and I held it…it was cute…and my parents freaked and told me it’s mom would kill it because it had my scent (nice parents, huh?) I wanted to keep it as a pet, my parents said no. However, I put it in my backyard in a big box to keep to play with. My neighbor knew about it, came over and stole it from me. I was so upset, my parents were not…..they told me I was NOT keeping a pet squirrel. Wow, long comment here….haha…anyway, that’s my squirrel story…I forget what ended up happening…I think I yelled at my neighbor but in the end our parents made us release it into the woods or something, it was heartbreaking…LOL

I am posting nail polish on my FF tomorrow! I LOVE Wicked in the fall…idk if that’s too dark for yah, but I lovve it!

I know this post is two years old, but I have to say YUM!!! I have some raspberry-peach jam that I made a few weeks back, so I think I’ll use that with this recipe.
