Morning! I hope you had a restful weekend and a very Happy Halloween! I honestly didn’t see too many kids in costumes, but the ones I did see were CUTE.
Yesterday my mom and stepdad came over for breakfast around 10. I wanted to make a fresh batch of muffins or something, so I started searching around the blogosphere. I went over to see what Angela has made lately and as soon as I scrolled a bit, bingo. I had everything that was on the list so I got busy in the kitchen where Buttery Apple Streusel Oat Squares were born.
It was a hit with everyone, but especially me. Angela cut these up into bars, I ate it warm out of the oven…then room temperature out of a bowl, then cold with a fork. I couldn’t stay away from this. There is about 1/3 left right now, (I think…well not I think, I know, I ate 1/3 myself) and I did cut that into 2 giant squares. I may go dive back in right now. 13 miles=hungry.
I used Angela’s exact recipe, with the following changes:
- I used butter instead of earth balance.
- I used 1 flax egg instead of a chia seed egg.
- I used whole wheat pastry flour instead of kamut flour.
We did 13 miles yesterday, which is the longest run of our training and my life. Danny and I both felt good the entire run, but as soon as we stopped I was very creaky. Last night I felt the sorest I have so far, so hopefully lots of water, greens, pizza, apple strudel, ice and rest will do my body good. I also have a date with yoga at 4.
