Chocolate Peanut Butter Truffles!

Mad rush is on! My mental lists going on are insane. I have so much going on in my head, I really need to get it down on paper. I’m sure you’re saying the same thing to yourself…right? Please say yes.
I’m trying to make 1-2 cookies/holiday things a day. So far it’s working for me. I can only do that much because I am making holiday baskets for Pure Bliss. Those are my top priority!
Yesterday I made New York Times best chocolate chip cookie recipe and peanut butter chocolate truffles. Both were a huge hit at own impromptu family dinner we had. We weren’t planning on it, but we ended up having 7 of my family members over for dinner. They are proof these truffles & chocolate chip cookies are amazing.

Chocolate Peanut Butter Truffles

Ingredients
- 3 1/2 cups cashews
- 1/2 cup peanut butter
- 1/2 cup puffed millet (or puffed rice)
- 1/2 cup agave nectar
- 1 tbsp vanilla extract
- 24 oz. chocolate morsels (1 1/2 bags)
In a food processor, process cashews to a flour like consistency. Add the peanut butter, agave nectar, puffed millet and vanilla extract. Process until it’s all combined. Rolls into balls and place on a baking sheet covered in wax paper. Refrigerate for 30 minutes. After 25 minutes, melt the chocolate over a double broiler or in the microwave. Remove the balls from the refrigerator. Re-roll any that look misshapen. Dip the pb balls in the chocolate using a spoon or tongs. Cover it completely in chocolate, working quickly. Place each truffle on wax paper and refrigerate or freeze so chocolate hardens.

You can also drizzle some peanut butter on top of the truffles to help them look neater. I didn’t do this yet, but I plan on it! I’ll edit this post if I end up doing it.
