Morning! It’s a cool 44 degrees this morning….brrr. At least the sun is out right?
Last night I made a delicious dinner that I have to share with you. I was having one of those nights where I didn’t want to eat or cook anything, but quite honestly, I spend too much weekly at the food store to have take out again. For 3-4 weeks I barely bought anything because the thought of cooking anything made me want to crawl into a hole. Egg drop soup and steamed veggie dumplings were ordered too many times. This week was not the case, so I had to figure out something to cook.
Lately peering in my very stocked pantry just makes me more angry, which usually leads to me sitting on the couch, floor, chair, anywhere but the kitchen. Last night I came across brown rice spaghetti and dinner just came to me. Garlic & oil is one of those dinners my mom would just throw together during the week occasionally. Sometimes she would add clams. Garlic & oil is a definite comfort food for me. Apparently I needed that last night.
Cook spaghetti in a pot of water, until al dente. Meanwhile, in a large frying pan, heat 1-2 tbsp of olive oil and saute chicken sausage, lightly browning on both sides. After browned, cover and heat through for about 5 minutes, on low heat. Add spinach, shut heat. Let spinach wilt and stir. In a small saucepan, heat olive oil and garlic on a simmer, until garlic is lightly browned. Before draining pasta water, add 1 cup of pasta water to the small saucepan. Drain spaghetti, and combine spaghetti with chicken sausage & spinach. Spoon garlic & oil sauce over pasta. Top with a generous portion of pecorino romano and enjoy!
This was probably the best thing I’ve made in a long time. No it’s not the lowest in calories, but I promise the taste delivers. Danny and I didn’t talk until dinner was over….which only took about 10 minutes. Maybe less. I’m glad I didn’t make the entire pound, because I would have eaten it. No doubt.
Today is a Koga workout day. I’m off to the gym in 30 minutes to work it out before an insane day.

It’s Autumn here in South Africa at the moment and the morning temperatures are the same here as well. 44 degrees Fahrenheit. It’s not nice
This sounds like a great tasting recipe. Glad you found something that you were able to eat.
What I like lately is Butternut and Split Pea soup made with some beef stock in the Slow Cooker or Whole wheat pasta topped with ground beef seared in onions, garlic, parmesan cheese and olive oil. Served with salad.

I love just garlic and oil on pasta. Sometimes I’ll add anchovies, and always red pepper flakes, but I love the simplicity and taste of just plain olive oil and garlic. This is something I would like and I’ve made very similar dishes in the past. The last good thing I ate was mashed cauliflower with roasted garlic
