Drooling over foods for Easter!

Easter is coming and I’m thinking about some good food! Come on, if you celebrate aren’t you thinking about the same thing?

I didn’t give up anything for Lent this year because so many foods tasted gross to me, I was already avoiding so much. The past couple of years I’ve given up shopping, but I’ve given up shopping since we bought this house, so I’m good there too. One thing I did try to do was be grateful and realize how lucky I am, every single day. I think I did a pretty good job with this.

Anyways, food!

We’re going down to Jersey to celebrate Easter with Danny’s family and I have been thinking about what we’re going to make. After searching Pinterest and some favorite blogs I came up with some favorites!

Roasted Eggplant & Feta Dip

Bacon Wrapped Caramelized Sesame Asparagus from Jessica

Mini Caprese Bites from Framed Cooks

Quinoa Pizza Bites (not really for Easter, but a fun appetizer)

Spinach Phyllo Pie by Martha Stewart

Mmm…these all look amazing to me. How can I make these all between Saturday night and Sunday?

What are you making for Easter? (If you’re not celebrating, are you making anything good this weekend?)

I’m hoping that someone else will cook me an Easter feast and that I’ll be too busy with baby, haha. Strange Easter for us this year :-)
