Labor Day Weekend & One Bowl Chocolate Cupcakes!

by Nicole on September 4, 2012

Morning! I’m blogging from the Jersey shore right now, but we’re about to head back to Long Island in a bit. The weather here has been junky the past 2 days, so we only got one day of the beach in…but there was A LOT of relaxing. I’m not complaining…at ALL. And by relaxing I mean 7 episodes of Sons of Anarchy season 4.

Danny took off today so we didn’t have to rush back from our long weekend, so we’re just enjoying some coffee and the Today show before we get in the car.

This weekend we had our second baby shower given to us by Danny’s parents. It was such a nice day. I’m (we’re) so beyond grateful for the love that surrounds this baby. It’s not that I didn’t expect it, but I didn’t expect it to this degree.

I know I always say this, but it’s so amazing to celebrate with family and great food. A very special thank you to Danny’s cousin who made these delicious, adorable cupcakes.

They were Martha Stewart’s One Bowl Chocolate Cupcakes frosted with Swiss Meringue Buttercream. I highly recommend making these for a special occasion. I especially love how they aren’t absolutely loaded with sugar, but still don’t sacrifice taste at all!

Yum! Thank you Lauren! And thank you to Danny’s family for throwing us a beautiful shower!

Don’t forget to enter my Vega protein bar giveaway! Today is the last day!

Also good luck to all my teacher friends who are heading back to school/work today! I’m thinking of you!

Hope you all had a wonderful Labor Day weekend!

You’re so welcome! I’m so happy you liked them so much! Martha’s buttercream is my go to because I hate super sweet icing personally haha. And I was so psyched to have a great excuse to finally try making the pineapple flowers! I figured if anyone would appreciate them, you would! : )

So glad you had a wonderful weekend!! And happy that you didn’t have to deal with Labor Day traffic yesterday – traffic up here makes me NOT want to go anywhere over holidays!!!!
