Today feels like Monday to me since it’s such a short week. (I don’t think that makes sense..) Even though I did work half a day yesterday, I still feel like I had a super long weekend! Super long weekend, means I have no short of a million things to do today.
I’m trying to get back into somewhat cooking. I say somewhat because most of the time I have no desire to cook or eat, but I’m trying here. Plus, Danny does have to eat, so I’m really trying here. Some days I’m convinced that the 3rd trimester stinks as much as the 1st. The nausea and food aversions/disinterest in food is NO fun.
I’m trying to make easy meals that take 10-15 minutes to prepare and that pack a nutritious punch. Like this meatloaf. Meatloaf was one of the first meals I ever cooked for Danny and one of his most favorite things I make. And no I do NOT use ketchup in my meatloaf.
ingredients Preheat oven to 350 degrees. Combine all ingredients in a large bowl. Shape into a long oval shape about 12-14 inches. Bake for 35-40 minutes until cooked through, covered.
I promise you don’t even taste the veggies in this meatloaf. It’s just delicious. Make it.

I love meatloaf. My mom makes it and puts velveta cheese in it.. not healthy… but delicious. She also fills it with green peppers and onions! yum! One of my favorite meals she makes!
