MIMM: Food & More Food

Happy Monday!


We’re happy today because my sister is around to hang out with us and we’re happy to see her off to Russia. Sad to not see her for almost two weeks, but I know it will go quick and she’ll have a phenomenal time! We haven’t not seen each other for that long in years. Lucky, I know. Thanks to Katie for hosting MIMM. :)

Food lately:

I made Jessica’s white pizza with spinach and bacon last night and it was unbelievable. I love a good white pizza. Check out my pizza party post to learn how I make pizza at home.


Greek salmon & salad: drizzled salmon with olive oil and sprinkled with oregano, salt, pepper and garlic powder. Baked at 425 for about 10 minutes. (Also sauteed cabbage & shredded brussels.)


Third batch of banana nut chocolate chip muffins (left out walnuts, added 1/3 cup oats)


Taco salads: sauteed turkey meat with chili powder, salt & pepper. Ate it over greens, shredded cheese, avocado, tomatoes, carrots and toasted brown rice wraps.

I have a couple new recipes on the docket for this week. I’ll be sure to share how they turn out.

I’m off to the dermatologist for a little check up because I’m still getting some eczema spots on my face.

What are you doing for Valentine’s Day? We don’t have any big plans but I’ll probably cook something semi-special on Friday or Saturday.

So great to have visits, isn’t it!!!! I am still in love with Ingredients of a Fitchick Cranberry Pecan granola & Sprint to the Table coffee protein pancakes which I make with any liquid, not just coffee.. has to be easy for me! :)
