Hope you all had a wonderful Memorial Day weekend! I really enjoyed the 3 days!
Sunday is our typical pancake day. Danny usually makes them, but I decided I wanted to try to make fluffier ones today. I thought adding chobani may help with that and it certainly did!

Ingredients
  • 1/2 cup plain 0% chobani
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup almond milk
  • 1 egg

Put all dry ingredients in a bowl and mix. Add wet ingredients and stir to combine well. Scoop into heated griddle over medium heat. Make pancakes to size preference. (I used 1/4 cup). Cook until edges set and surface starts to bubble. Flip and brown other side. Serve with maple syrup, berries, almond butter, butter, etc. 

These were delicious. I had them with strawberries, turkey bacon and maple syrup on top. I don’t mess around with my pancake topping.

When I was pregnant I balanced many healthy foods with a daily dose of some type of chocolate. I basically am still doing that, but decided to kick it up a notch. Instead of having my small piece of dark chocolate, I decided to make some of my pumpkin chia pudding. I still get my dose of chocolate, but I’m also getting some other important nutrients from the pumpkin and chia seeds. I also love to sprinkle some cacao nibs or dark chocolate chips on top. I am also a huge fan of eating this as a meal. If I do that I take a larger serving and also add in some almond butter and granola.

You’ll notice in this recipe, I use very minimal sugar and use almond milk to reduce the calories from whole or skim milk. This is truly a no guilt snack or meal!

Good morning!

My heart is still broken for the Newtown families. I certainly have been holding Olivia tighter these past couple of days. I just really have no words. I hope the Sandy Hook community can feel the love of the country.

I feel guilty that our weekend is normal here…that we resume our normal lives while those families are grieving. But for us, I guess, there’s not much for us to do besides keep them in our prayers and donate to funds like this. 

When I got up with Liv this morning, I gave her about 20x more kisses than I usually do and felt so grateful to be feeding her, changing her diaper and getting dressed for the day. Going through our normal routine of waking, feeding, making coffee and pancakes never felt so good, yet so sad at the same time.

Danny I have made pancakes every Sunday for the past couple of months. Danny usually makes them, while I hold Liv or make the coffee if she’s sleeping. Since making pancakes just feels like home to me, I thought I’d share the simple recipe we use. I couldn’t decide whether to post this or not today, since blogging seems so irrelevant…but since I’m doing it with the families in mind, I decided to.

 

Often we will half this recipe, but if we want some for leftovers for the next day or to freeze then we make the entire batch.

Hi! I’m so happy that you all enjoyed my post about my road to recovery! Thank you for the supportive comments and tweets. I really appreciate it!

I’m getting into this early morning groove! I hope though that eventually 5 am becomes my workout time (5-5:30) and then I can get work done during naps 1 & 2 instead of using this time to do work. That’s the plan…but we all know what they say about those.

The weekends have been spent relaxing, straightening up my disaster of a house and having visitors. We are so lucky with all of the family and friends that want to visit Liv…and bring amazing presents. If anyone thought I was spoiled as a kid (okay, still…) then Liv takes it to a whole new level. We will be having lots of lessons in her life to teach her how to be grateful/thankful/appreciative AND giving.

With all the company we’ve been having, I finally decided to get on the ball and have something on the table when people get here. (Okay, it was just getting in the oven when my cousins got here on Saturday…but it made it out in time!) I wanted to make something super easy that was semi-healthy, tasty, chocolately AND fed a bunch of people.

Enter…Whole Wheat Chocolate Chip Banana Loaf….what a name, right?  I wish I had a picture, but I don’t. It was delicious and loved by everyone…except my sister who despises (the very subtle taste) of banana!

 

I promise this will be a hit with any company you may have….or just with you!
