Did anyone else watch the ING NYC marathon yesterday and feeling super inspired? I’m sure many of you did. While I’ve usually caught some of it on tv, this was my first time going into watch. I’ve never had anyone close to me run it before and I’m so happy my first time watching I could cheer for my good friend.

John ran for Multiple Sclerosis and raised $10,000. How amazing is that? Even more amazing is that he grew a beard for his entire training and finally shaved last night.  He finished in 3:44 too!

We had a nice cheering section! Look at those honkers!

This wasn’t even close to everyone, but I left the photography to my pal for the day.  But aren’t those beards cute?

As far as the house goes, we did make some serious progress this weekend, but we are living one more week without cabinets and appliances. This week we are down to the stove and sink in the kitchen. The fridge is in the basement now and I’m trying more than ever to keep my stress and anxiety at bay! We got some dry wall up and the ceiling done and spackeled. It couldn’t all be done because the electrician has to come Wednesday and Thursday to fix our service.

Which means...more tea, less coffee. Still.

I’m okay with it for now. I know the end result will be SO worth it!

So this week, lots of barbeque still and maybe my mom will have us over for dinner AGAIN! :)

Eating in Eataly! Yesterday we went to Eataly in NYC. It was our first time there, but certainly won’t be our last. Our friends John & Lauren told us about it after they went, when they got back from Italy.  Basically they have every amazing Italian food under the sun, from meats to fish to cheese to veggies to pizza & pasta. You can also sit down and eat there, but we decided to take food home.

I’ve said before that one of my favorite dinners are simply bread, cheese, tomatoes and some type of veggie. That was what I was dreaming of for dinner last night. We picked up a loaf of spelt bread, which, I wish I took a picture of. It was large and crusty and besides 2 pieces, it’s GONE. They had so many different kinds of breads, from white to wheat to 9 grains in all shapes and sizes.

We also picked up some fresh mozzarella that was just made, olives, and ricotta salata, which is another type of cheese. (Ricotta Salata is a sheep’s milk cheese, think Italian feta.) Danny wanted some prosciutto and supresetta, so he got a couple slices of those too.

When we got home I turned on the broiler and cut the bread up into slices; the recipe for a perfect sandwich.

Basically any combination is amazing. Danny and I made sure to try out each one so we could happily report no combination is a bad one.

Cheese and bread in moderation is a very wonderful thing.

Yesterday Danny and I both took the day off, well except for blogging and 1 health counseling client, but it basically was the majority of the day off.

We went for a run in the morning and at a cool 68 degrees it was so gorgeous out. I felt like I could actually breathe because there was no humidity. It was SO nice to be out. It’s runs like that, that make me thankful to be running again. I don’t take for granted the fact I’m able to go out and run 5 miles.

Later on in the day we went to the high line in Manhattan. Danny has wanted to see it for awhile. It’s an old railroad track that a non-profit re-did to make it a beautiful walkway filled with greenery, a path to walk on and sights to see.

Plus there was an ice cream truck that had homemade ice cream sandwiches. You pick the type of cookie and ice cream you want and they make it right there! It was DELICIOUS!

I also got to meet up with the beautiful Erica. We chatted, caught up and then I got my inspirational necklace from her. So excited to wear it proudly.

When we got home I was pretty hungry, despite our mid afternoon cool snack. It had to be a quick dinner to calm my hunger beast. I’ve been experimenting with tempeh, so I whipped that out and took out my black olive pesto again. Basically I used it on Wednesday night’s salmon dinner, my lunch yesterday AND dinner. It’s that good.

Lesson: this can be used basically in any meal or dish and taste delicious. Tacos, salmon, salads, anything. Do it!

Next on the agenda in cabinet clean out is to make Angela’s no oil pesto!

Good morning! Holy heat wave, right? I know, it’s what everyone is talking about. The weather is just a hot topic of conversation.

I took the day off from blogging yesterday because I got home really late (for a week night…and for an old person like me) on Tuesday and I just had no time or energy to blog.

Tuesday I had a busy day with Wanderlust and my friend’s event. Wanderlust in the city was a preview of their big event in Vermont at the end of the month. To quote them:

I thought it was a great event. I enjoyed the music and the two instructors. I thought they taught well together, and I enjoyed hearing them switch off. You could tell (in my opinion) that they practice two different schools of yoga, but they brought it together beautifully. I’m really not that hard to please, so I was very happy on my mat, doing yoga in a beautiful setting.

I was also lucky to be provided with a really cool outfit to work out in from C9 by Champion (at Target). I had a couple of things from their line, but these are better than what I have. I found the C9 by Champion clothes to be extremely lightweight, comfortable and cute too…which is obviously very important. Honestly, I was surprised at how well made it was. The sports bra would be more for yoga and the bike rather than running, but it still fit well. The best part about it all, is that the line is very inexpensive. I know we all die for Lululemon, but these are good quality clothes for a fraction of the price.
