Sweet Sweet Potatoes

Yesterday I had a good first day of relaxation, which is my ultimate plan for vacation. I did some bloggy things, cleaned our apartment, which took MUCH longer than I anticipated, once I opened Danny’s drawers and gasped at what he’s done to them… because I am neurotic. So I had three parts of my day, which were broken up into computer time, cleaning time and gym time. They were not equally broken up, don’t worry, I didn’t spend 4 hours at the gym (AT ALL, or even close). 

Does anyone else find that they are more hungry when they are at home all day? Maybe it is because of the accessibility of the food. After breakfast and 2 cups of coffee, I wanted to have a snack before I went to the gym. I had really worked up an appetite sitting on the couch.  I decided to throw together a snack of 2 apples (they were small).  I didn’t want the apples just cut up so I cut them into chunky pieces and sprinkled agave nectar and cinnamon over it. I put them into the microwaves for 2 minutes, 30 seconds. 

When they came out I sprinkled raw sliced almonds and cacao nibs over it. W-O-W. It was pretty filling too!

For lunch I had some leftover butternut squash fries and I made a quick tofu scramble. I also had some leftover tomato sauce soup. Usually I don’t eat warm things for lunch, but I was SO cold after being out in the snow for 5 minutes coming back from the gym I just had to.  The tofu scramble was: tofu, asparagus, eggplant, portobello mushroom, zucchini and 1 egg white. I cooked it in a little bit of teriyaki and soy sauce. It was just what the doctor ordered.

For dinner I decided I wanted to make some sweet potatoes because I haven’t made them in forever. I based it on this recipe from here. I peeled them and cut them up into chunks. I tossed them with 1 tbsp of olive oil and 1 tbsp agave nectar, sea salt, pepper, rosemary. I put them in the oven at 400 degrees for 50 minutes. Toss and stir them around about every 15-20 minutes.

Yum. They were so soft and sweet. The rosemary really adds a wonderful flavor to the potatoes. I really should have let them cook about 10 minutes longer, but I was way too impatient. (I had already had a HUGE salad because I couldn’t wait any longer to eat before Danny got home.)


There’s my plate, with an un-pictured piece of bread, still leftover from Sunday’s humungous loaf. We finished it off, so we can stop gorging ourselves on it. I am on bread overload, I need a break.  Well, we will see what today brings me. I am doing some wedding things with my mom today (can’t wait!). She’s getting married in July! I’m so excited. We will be visiting JCREW this week to try on different dresses for my sister, cousin and myself to wear!

Ha, I completely agree! If I'm home alone (and especially sitting in the kitchen) it automatically means that I've never had enough snacks :)

I love sweet potatoes! I have been adding them to my oat bran the past couple of days and really love the combo.

I love sweet potatoes take them to lunch raw and microwave them at least once a week I can eat them everyday anytime….love this!

Love love LOVE sweet potatoes. Your recipe sounds great! Will have to try them with rosemary. I usually just sprinkle them with some curry powder – SOO good!

The salmon you made also looks wonderful! I'm als a huge salmon fan, lol. Okay – I guess I'm just a food fan in general :P

Great food, wish I was there to help you eat it! Your salmon looks just divine! I love salmon but don't eat it often… the guys don't really care for it, poor me.

Eat salmon just about three times a week…love sweet potatoes, bring them raw to work and micro for six minutes my lunch three times aweek. plain and healthy ! love them
