Hi! Welcome to my little blog, Making Good Choices. My name is Nicole and I have a passion for cooking, baking, eating, running, yoga, etc, you get the picture.  I am a Health & Nutrition Counselor that helps people live a healthier, happier life. I used to be a 4th grade special education teacher in NYC, but after 5 years, I realized that wasn’t for me anymore. Luckily, I had the opportunity to study at Integrative Nutrition and now am very happily in my 2nd career.

I spend my days working with clients, baking, cooking, blogging and working out. With my clients I do a variety of things that include introducing them to new foods, recipes & even cooking or baking with them. I also have a healthy online bakery called Pure Bliss Eats that runs along side my health counseling. If you mention you’re a reader, you just may get a secret surprise in your order! I’m also proud to be a FitFluential Ambassador AND a coach for MyOmBody.

I started this blog in August 2009 after getting a boatload of emails and phone calls from my sister and mom about recipes/tips/meal ideas. My sister and husband help convince me that I should blog as a way to keep track of recipes and tips that I have accumulated over the years. In the summer of 2009 I finally had “me” time, which was unlike the past couple of summers when I was in grad school and/or planning a wedding. I spent a lot of time over the summer cooking, baking, running, exercising and spending time with my family and friends.

After the craziness of that school year, I really forgot how much I really  had a passion for cooking, baking and just, over all, living a healthy life. Yes, I always tried to incorporate healthy living/eating/working out into my everyday life but it was on auto-pilot. After having time off I realized how much I LOVE all of those things and being able to share it with others, which is where the blog was born. While it is a big undertaking to blog everyday, I find it to be a huge stress reliever and release and also a great way of communicating with other people who enjoy the same things! I have learned SO much from reading other blogs and have expanded my repertoire of foods.

I eat a well balanced plant based diet. I don’t say no to any food because I believe everything has it’s place.  I tend to (mostly) stay away from things like fried foods. I enjoy eating whole grains, lots of veggies/legumes and fish.  I try to eat whole grains and stay away from white sugar and flour, but clearly there are exceptions to every rule! I believe that eating well has to be healthy AND taste good.

As for exercise I enjoy running, lifting weight, yoga, taking classes and basically anything that gets me moving. From time to time, I enjoy racing, but for now I’m just enjoying actually running injury free.
