Whole Grain Pesto Pizza!

Yesterday was a super lazy day for me, I promised myself today would change. When I say super lazy day I mean I didn’t even see the outside world. I stayed holed up in my apartment alllllllll day long. What I did do was clean my entire apartment (except the floors, I don’t do the floors…but I did vacuum). I baked 4 different types of muffin tops, mini muffins and mini loaves. Who do I do this for? Mainly my husband, but I did make a box for my friends and some for my sister and family.  I am also eating one right now (PB chocolate chip muffin top), which I did manage to make vegan. 

I also did a 90 minute Dave Farmar yoga podcast. I made my apartment semi hot (by turning the ac on low) and got a good sweat in. So pretty lazy day, considering I get up at 7 and just spent a ton of time on the couch.  Oh yea, I also worked on what I wanted for the revivemyblog blog revival. It’s going well and I’m super excited!!!!

When we got home on Sunday, before we napped for 2 hours, I decided I would make some pizza. I threw the ingredients in my trusty bread machine, with 1/2 whole wheat flour, 1/2 spelt flour and 1.5 hours later, voila, pizza dough.

Pesto Pizza: Fresh tomatoes and mozzarella cheese


Pesto Pizza
Ingredients
1/2 cup fresh basil
1-2 cups baby spinach
1/4 cup pecorino romano or parmesan cheese
2 cloves garlic
1 tsp salt
1/2 tsp black pepper
1/2- 1 cup olive oil 

Preheat the oven to 400 degrees. Roll out the pizza dough in a circle shape. When the oven is preheated, put the dough in the oven for about 6-7 minutes. While the dough is in the oven, make the pesto sauce. Combine all ingredients in a food processor except olive oil. Combine. Stream in olive oil and mix again. 

Remove crust from oven. Spread pesto over pizza crust. Sprinkle mozzarella cheese on top and add pieces of tomato. Bake for 20 more minutes.
The crust was perfectly crisp.

I love pesto pizza! My husband hates it though :(

Those pizzas look lovely. I recently made some arugula pesto that I bet would taste awesome on that dough.

I am obsessed with pesto…and love pesto pizza even more! This looks great!! That's awesome you have a bread machine! I'll add it to the list of kitchen gadgets I need to get ;-)

it does not sound like you were lazy to me….anyone who bakes and cleans and does yoga is not lazy! the pizza looks delish-wish i had some for dinner tonight!
