Pumpkin Dark Chocolate Chip Muffins!

by Nicole on September 1, 2010

What a day! I’m so late with posting and it’s all because of alternate side parking. I had to high tail it out of here at 10:30 this morning and I had a bunch to do before that, like watch the Today Show, so I had no time to post. I feel like I have so much to write about…. but I won’t bore you with it all.
I went into my classroom today to set up. Basically the entire room was in boxes from my move from the 2nd floor to the 3rd floor. It took us 5 hours but we (my co-teacher and I) got all of the boxes into (mostly) labeled and leveled baskets. It really is like moving apartments/houses when you move a classroom. Plus we don’t have an air conditioner or a fan, so it was HOT. I’m just glad to be mostly done.
In workout news:
Yesterday I went for a run in my new Brooks sneakers. LOVE them. I was feeling a little achy in my knees for a couple of runs and I wasn’t sure if it was because I had slightly up-ed my mileage. I decided to get new shoes while we were in Philly, and it was the right decision. (I got the shoes from the amazing suggestion of the people who works at the Philadelphia Runner.)

New Sneaks

Today I tried out Bob Harper’s new fitness DVD’s. *I bought these with my own money, just FYI. Bob Harper just came out with four new workout DVD’s and I thought they would be perfect to get me excited to start the new school year with something different. I will post a specific review for this dvd, but it was HARD. I am a big fan of Jillian Michael’s dvd’s but I have to say this is harder. It was 66 minutes from warm up to cool down with a little countdown clock to remind me how many minutes of heart pumpin’ torture (the good kind) there was left.
As far as the recipe for today goes, I went back to my most favorite type of muffin and made some pumpkin chocolate chips muffins. I haven’t made them in forever because it’s so hard to find canned pumpkin at the store. I finally found some at Whole Foods and scooped up a can. These are a perrrrrfect snack, breakfast, dessert or anything you want it to be and even more complete with almond or peanut butter spread all over the top. Trust me, use the almond butter.
All ingredients thrown in there

All mixed up

Have you tried any new workout dvd’s or recipes that you are lovin’ ?

I guess it is about that time for you isn’t it? Glad you got things under control today with the new classroom. I am sure that felt good! I haven’t tried anything new in a while, but I want to as far as workouts go. I will have to look for that one!

I’ve never heard of Bob Harper. I’ll have to check him out. Which Jillian dvd is your fave?

Everyone raves about Brooks sneakers. I need to get fitted and have my gait analyzed at a running store. I’m planning on asking about them. I get calf pain and shinsplints when I run so I hope new sneakers will help.

Good luck back at school!

Wow. These look great. Such a more wholesome recipe than the 3-ingredient Chocolate Pumpkin Muffin Recipe one i just Kart’d ( http://www.kartme.com/notes/chocolate-pumpkin-muffins-0 ).

I added a link to your recipe to my Kart. Thank you for sharing!!!

I’m jealous of your new runners…they look great and there’s nothing like that first run in a springy new pair.

You say BH has 4 new dvds? Which one are you talking about that was hard? I like the idea of an hour long workout as opposed to JMs which are 20 min.
