Microwave Dinner

What do you do when you have no plans?

I usually save one afternoon/night a week so relax on the couch and catch up on my dvr/blogs/magazines.

Most nights of the week I cook some type of meal. People always ask me about cooking for one and how I make time to make dinner each night. I always post recipes of quick and easy meals as well as meals that take up more time, but I almost never post thrown together, microwaved meals because they are ugly (but tasty).

When Danny’s not home for dinner I tend to do thing that are considered “no-no’s”.

Like:

1. Eating out of gladware’s standing in the kitchen.

2. Having dinner while on the computer and watching tv and maybe looking through a magazine.

3. Snacking on 3 different foods before eating dinner.

Oh well, I went a little crazy tonight.

I lit some candles…

I got into some intense reading…

and I had a dinner that I slaved over for hours…

Microwaved spaghetti squash topping with spinach, tofu and a boatload of pecorino romano. I know, you’re jealous….or embarrassed.

See I am normal.

Later I’ll be at the gym for a spin class and hopefully at the GAP to buy a new pair of black pants.

What is the most embarrassing meal you eat and enjoy?

The most embarrassing meal I like has hardly any nutritional value and most people, except my dad, think it is gross… it is white rice with yogurt (and a sprinkle of salt). Back in high school I had mono (I didn’t know I had mono till a few years later) and a symptom is eating bland foods… so this was something I began to enjoy and it just stuck with me.

I love spinning I hope you enjoy your class!

That looks like a good meal to me. The most embarassing thing I eat and enjoy is a whole wheat tortilla slathered with garlic & herb laughing cow and topped with a butt load of sauteed mushrooms. It’s so good!
