Pumpkin Spice Granola

Happy Friday!! Doesn’t that phrase sound like music to your ears? I know it does to me.

On my day off yesterday I decided to get a bit creative in the kitchen. I kind of love granola, but I don’t buy it much because of how much sugar is in typical granola. I’ve tried to make my own before, but I did it in the toaster oven and let’s just say there was fire. This time, there was not. It was a success.

Before I give you the recipe, I wanted to share a “day in the life” of me story…or really a hour in my life.

Yesterday I walked outside and took a huge breath of fresh air. It was gorgeous out and sunny. Very sunny. I went to reach for my nice Oliver People’s sunglasses in their safe case and when I went to open the case, to my surprise it was empty. WTF. I immediately get a vision of my sunglasses on my desk and then not on my desk. I knew someone must have taken them during parent teacher conferences when I left the room. Ugh, who would do that?

No problem, I was going to Bloomingdales anyway. Marc by Marc Jacob sunglasses were calling my name, especially with 20% off. Hello new sunglasses. As I’m sporting my new sunglasses on my way to meet my mom and stepdad for lunch, my mom calls. “By the way,” she tells me, “you left your sunglasses Sunday, I brought them for you.”

Nice, Nicole. You’ve convinced yourself someone stole them, when really you have no memory and left them at your mom’s. Yes, I’m writing in the 3rd person. I am that annoyed.

But on the other hand…this made me very happy…and very full.

Spices and Wet Ingredients

Oats and Puffed Millet

Pumpkin and Maple Syrup added

All Mixed Up

Mixed Together

Spread out ready to bake

Granola over a yogurt smoothie

*Note: I covered my cooling rack with wax paper to make it easier to transfer the granola when done.

Please tell me you’ve lost something and then re-bought it and found the original item.

Please tell me you fixed the situation by making large amounts of some type of food.

Please tell me you’ll make this granola so you can eat as much as I did. It’s that good.

I love homemade granola!!!

As for the sunglasses… its perfectly acceptable to have two fabulous pairs :)

I had no idea there was pumpkin and maple syrup in there! I just finished my granola with yogurt – AMAZING!

Pumpkin granola! Yayyyyyy!!! I have to make it this weekend. I still have 6 frozen tubs of pumpkin puree in my freezer. Gotta get a move on it.

And just so you feel better, the sunglass situation, yesterday I dropped my bookbag in the passanger seat when I hopped in the car (typical). My sunglasses were on the seat (not in their case). Now I need new shades as well. :-P

I love homemade granola!! I seriously eat it by the handfuls. It also makes such an awesome gift. I love putting it in nice jars and giving it to my friends :)

That is why I buy my sunglasses at Target. That and I don’t have any money. Now you have two pairs…one for each side of your head. Start a new trend girl!

I am definitely making this granola! :) I love maple syrup and I love pumpkin! I always lose my sunglasses, but I buy the cheapo $10 sunglasses so it’s not a huge deal.

Sadly, I never find the other thing that I have replaced. Oh well, now you have a backup pair! I love making homemade granola! I am making some today too! Have a great weekend!

Oh, I have absolutely lost something, bought a new one, and then stumbled upon the old one shortly after. I used to be notorious for doing that with sunglasses. It happens!
I love the sound of this granola! The base of my favorite granola bar is puffed kamut and granola. I love puffed kamut and millet! I will definitely give this a swing! I could use a little pumpkin in my granola :)
