Pumpkin Chocolate Chip Pancakes!

Hello December!

Thank you so much for all the wonderful birthday wishes! I do love my birthday (who doesn’t) it is one time a year when you are made to feel extra extra special, and when you teach 26 4th graders, they greatly participate in that. I got lots of cards, tweets, texts, calls, comments, facebook messages and hugs too. Each one was very special.

Here are a few cards from my students. They get extra excited over teacher birthdays.

I don’t know what you do for dinner on your birthday, but if mine’s during the week I’ll usually decide to make something. This morning (yes this morning) I decided I wanted pumpkin chocolate chip pancakes and Danny said he’d cook and clean. Score. Sorry for the awful lighting. It’s the winter.

How about that bite?

I also had some egg whites with this. I went a little crazy with the butter, syrup and jam. Hey, it’s my birthday right? For dessert I had a cake my friend from work got me! Thanks Kathleen!

Thank you so much for all of you who made me feel extra special!

Injury Update: My ankle is feeling much better. I did a very light bike and elliptical workout yesterday and felt good after it. I’ll probably do the same thing after school today until it continues to strengthen and get better.

Always pancakes for my birthday dinner! I LOVE breakfast for dinner! I try to scam the boys as often as I can so I can get it too! I hope you had an incredible birthday and I hope that ankle feels better soon! Have a great day Nicole!

Awww what cute kiddos!! Great job on choosing your bday meal :) I probably wouldnt have chose dinner at all, I def would have just picked a dessert for dinner lol

Pumpkin plus chocolate always equals YUM! I would probably eat pancakes for dinner at least every other night if I lived by myself…Thanks for sharing the recipe!
