Peanut Butter Brownies

by Nicole on May 5, 2010

Morning! I finally have a camera cord, thanks to Danny bringing one home from work for me! I was so happy to see it and upload all of my pictures! I have a couple more pictures from last weekend to share with you, even though it’s Wednesday already. I am looking at these pictures and channeling how relaxed and rested I was over the weekend.

Celebrating 10 years of life with a Hoffman’s Ice Cream cake…yum.
She’s just too cute.
Stories on the couch before bed. (Reading Verdi)

This morning I got up and did Jillian Michaels Boost Your Metabolism for my cardio for the day. I haven’t done that in over a week and it was TOUGH….it’s ALWAYS tough. For some reason that dvd never gets easier, I guess because it’s a ton of plyometrics, aka kicking your own butt.

I had to do some baking over the weekend and after pouring over many posts, I settled on making Jessica from How Sweet Eats brownies. Jessica has SO many delicious brownies on her site, I had a hard time even choosing from them. Finally I settled on the peanut butter brownies, because who doesn’t love pb and chocolate together???

even the batter tasted amazing

After Danny tasted this he said, “people will LOVE this.” He was right.

Brownies
  • 1 stick unsalted butter
  • 3 squares baking chocolate
  • 2 cups sugar
  • 4 eggs
  • 1 cup flour
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
For exact recipe for brownies, please visit How Sweet Eats.

PB Icing
  • 3/4 stick butter, softened
  • 1/4 cup creamy peanut butter
  • 1/2 pound powdered sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoons milk
Mix together. If it’s too thin add more sugar, too thick add milk. I halved the recipe because I had way too much leftover. This should be a perfect amount for the brownies!

Beware, you may lick the entire bowl before baking them. And if you don’t you will be sure to eat a couple of these once they are done baking! Remember to let the brownies totally cool before icing them.

People will fall in love with you if you bring these to them. I highly recommend it!
