Cashew Chocolate Balls and a Dress

by Nicole on August 20, 2010

Happy Friday! Where has this summer gone?? I’m sure all of you are saying that as well. I’ve had a pretty busy week and I think my body is started to prepare for back to school. I’ve been doing things I normally do during the school year, like falling asleep on the couch, waking up very early to run and having anxiety. Oh boy.

I didn’t post yesterday because I was all over the place, so I have to catch you up on my past 2 days, but I’ll give it to you in a nut shell.

Wednesday:

I woke up and left my apartment to head out to Long Island to pick up my sister and go to an Intensati class in Wantagh, LI. This is where I took my first Intensati class and fell in love. The teacher’s name is Connie and she is super motivating and happy and just makes me love the class. People must be on vacation this week, because my sister and I were 2 out of 4 people in the class. The problem with that is Intensati is all about saying/yelling the affirmations and with 4 people it’s not that intense. When you combine that with 2 of the people not talking, it’s kind of weird. Connie kept trying to get the other 2 people to say the affirmations, but they wouldn’t. So it left it up to Christine and I to put forth all of the effort. To be honest, I am not usually loud/outgoing/confident enough to be yelling the affirmations, but I had to step out of my comfort zone and I did it! I was proud of myself, but I felt like I had to do it for the teacher AND for myself to get something out of the class.  It was a great class and we had fun anyways…and boy did I wake up with sore legs on Thursday. After the class I dragged Chris to the beach for a couple of hours. I needed the sun and the sand (not so much the ocean).

Intensati (This is a link to a video of an Intensati class I took in the city, you can briefly see me in the back in a lime green tank.)

Thursday:

I saw the earliest time on the clock that I have in a couple of months. Danny was getting up to run so I figured I’d join him. I’d rather way up at the crack of dawn and have a partner to go with. Otherwise it takes me a long time to motivate myself and I knew I could take a nap after. We did our usual morning loop, which is about 5 miles. I don’t know if we ran slow or what because it took us a little longer than usual, but it felt good so I didn’t care. I don’t have a garmin or anything that tells me the distance. I don’t really want one right now because I feel like it would take away my enjoyment of running. I usually just run for a certain amount of time, or just run a loop I’m familiar with. I’m not saying that those who use Garmin’s don’t enjoy running AT ALL, I just know I would be crazy about running to a certain distance if I got one.

After running I came home and did about 20 minutes of yoga just to stretch out. It felt good, my hamstrings were REALLY tight, as they usually are. Yoga helps a ton. I also got started with baking and baked a bunch of peanut butter chocolate chip and brownie muffin tops for my friend’s bachelorette party this weekend.

When I was done with that, I made these cashew chocolate balls. I got this idea from Averie. These are like balls of energy. I usually have these in my bag for emergency hungry situations, which happens daily.

Enjoy them alone, or with peanut butter, my favorite! Danny isn’t a huge fan of Vega because it’s pretty sweet, but I’m using it until it runs out, then I will probably go back to Amazing Grass.

On another note, I need your help! I bought this dress from, where else, JCREW. I love it, but I’m not to sure about these tassels that are on the dress. I already removed 1, but i don’t know if I should take the other 3 off. What do you think?

Today I’m off to SoulCycle and then to the beach!!

I say get rid of the tassels as well… they look like they might lay funny once you actually put the dress on.

I love the recipe, and also love the format the new blog lets you put it in – so fancy! :P
And I love the dress, but definitely agree with most everyone else – I’d love it even more without the tassels!
Enjoy your weekend!

You’re intense! The balls look soooo good. The tassles are…interesting, though without them, the dress might need something else to pop…. I bet it looks great on you, though!
