Want an Instant (non-processed) BOOST?

Morning! Today is my friday. A 3 day work week? I’ll take it!
I just came back from run/walking outside. It’s perfect running weather. I walked a mile, ran 3 (taking .15 mile walking breaks in between each mile) and then walked another .5 mile home. It ended up being about 5 miles in total. I’m so grateful to be back to painless running. I’m talking a lot of walking breaks because I don’t want to do too fast too soon. Slow and steady!
I’ve been reading 2 books that I will have to fill you in on. ChiRunning and Body for Life. They are both really good reads and I’m taking away different things from both. I’ll have to do a review when I finish them.
I’m not doing the Body For Life eating plan exactly, but I am trying to get more protein. I’m just making a conscious effort to have a protein and carb at every meal. (Clearly the carbs are not the issue.) To help me up my protein, I figured, why not make a chocolately treat?
I’ve been a fan of making chocolate treats (cinnamon “donut” bites and cashew chocolate balls)  like these in the past, but I changed it up a little bit based on Gina’s recipe.
almonds and pumpkin seeds
  • 3/4 cup raw almonds
  • 1/4 cup pepitas
  • 1/4 cup chocolate protein powder
  • 1/4 cup agave nectar
  • 6 medjool dates
  • 1/4 cup almond butter
  • 1 tsp vanilla
  • 1/4 cup unsweetened cacao nibs

Process nuts and dates in food processor. Add protein powder and vanilla and process again. Add in almond butter and agave nectar. Pulse to combine. Lastly, add in cacao nibs and pulse again. Roll into balls and freeze. Makes 12-15.

I love making snacks like these because they are super minimally processed…as a matter of fact, the only processing that has occured, takes place in your food processor!
