Snow Day!

Happy Friday!! Wednesday night I acted like I was the age of my students…so that would be all of 10 years old. I couldn’t sleep…for anything. I tried switching locations, sides, tv shows, blankets, nothing was working. I wasn’t tired at all….and the more tired I wasn’t, the more annoyed I got. I was anticipating a possible snow day, pajamas inside out and all.

I finally fell asleep at 2 and woke up at 5:3o. I had a bbm from my friend Beth telling me I did, in fact, have a snow day. I quietly squealed in excitement and relief….since I’d only slept about 3.5 hours and went back to sleep until 8:30.

I tried to go out for a little bit, but once again my street has not been plowed…and as of 6 pm last night wasn’t.

So I had no choice but to do this…

all day.

What else did I do? I wrote my February newsletter (sign up on the left!) and took a nap.

I also compiled a short list of these easy to make, quick dinners. A good way to get started in the kitchen.

What’s your favorite quick and easy dinner to make? What do you recommend to beginner cooks that ask you for recipes?

LOVE snow days-isn’t it the best when you’re still in bed and find out you have one?
Quick and easy is usually a garbage salad or some sort of pasta-ish concoction. Newbies I always suggest veggie pizza on whole wheat-that way they can see they can have fresh wholesome food in a pizza form-life isn’t that bad when eating healthy!

My street wasn’t plowed either…. but we still had work! i am jealous of your day in the house!

I was hoping for a snow day and I’m not even a teacher! No such luck. I had to trudge to work. I live in NYC as well and when we had the huge storm around Christmas they actually closed my office. Now I keep expecting them to do it again and they won’t! I love quick and easy dinners – thanks for sharing!
