The Line Up: Thanksgiving

by Nicole on November 18, 2011

Happy Friday, happy Friday! My college friends and I would sing that to each other every week when it came around. And since they are all coming to NY this weekend, I’m in an especially good mood.

Friends coming, Danny’s brother’s family coming and Thanksgiving all in one week! So excited!

Yesterday was a great day because I donated 200 muffins to Hewitt Elementary for their nutrition week. I went in to hand out the muffins and they LOVED them. I miss kids…not teaching so much..but definitely miss kids. It was so fun to donate the muffins to something I’m so passionate about, health and kids. I would love to keep doing things like that.

Do you all have your Thanksgiving menu’s planned out? We have had ours figured out in our heads for awhile, but we confirmed it last night. I’m in charge of what I usually bring: stuffed mushrooms, stuffing & a dessert.

These are my favorite stuffed mushrooms. Yum. I usually make bread a couple of days before and make my own breadcrumbs. Hopefully that will still happen.

As far as stuffing, I made this for the first time 2 years ago. It was a huge hit and I keep on making it. I love how simple it is.

Dessert. Oh dessert. So many ideas. My sister and husband are really voting forĀ pumpkin cheesecake. I kind of want to make a dairy free one, but I don’t love all of the soy alternatives. I probably will change the crust and make my own, but I’ll let you know if I do that!

If you have any pumpkin cheesecake ideas, please pass them my way!

Today I’m off to the Pilates Absession for a couple of hours with my Pure Bliss Eats goods and then I’m going to hit up yoga!

Have a wonderful weekend!

I used to make a pumpkin cheesecake with a gingersnap cookie crust, very easy twist on a classic dessert and to finish I would drizzle the top with homemade caramel sauce. People loved it!

First time commenter. :) I love stuffed mushrooms! Too bad the hubs doesn’t like mushrooms or we would have them often. Thankfully we are going to a potluck so we don’t have to do much planning except one dish. Yay for donating muffins, that’s great!
