Weekend Highlights: Workouts, Food & House Updates

by Nicole on March 19, 2012

Morning!

Happy Monday and happy almost SPRING! Isn’t this the best, best time of year?

I haven’t been blogging on weekends because house work has been taking up the majority of it. Finally we have the living room, dining room and hallway painted. The walls needed some serious TLC, so it took awhile. Next up is office and first floor guest room. We’re crossing our fingers the first floor will be done during the summer.

I’ll have house update pics for you at some point, I promise.

What else?

Workouts:

Saturday my sister and I fully took advantage of the warm weather and went for a nice little walk. She thinks it’s more of a forced march, but I just keep reminding her to enjoy the outside before she works for NBC 6 days a week. :)

Sunday Danny and I enjoyed a 4 mile run. We haven’t run together in over a month because he’s been doing so much on the house, so it was nice to steal him away for a break. It said that it was 47 out and I definitely overdressed, wearing a vest. Danny was carrying it halfway thru because I got so hot.

Food:

Oh so much in the name of delicious food this weekend. Well mainly yesterday. We’re trying to have a date night/day once a week. It’s so easy for the days and weeks to get carried away from us. Combine that with me falling asleep on the couch at 9 pm every night, it doesn’t make for that many hours together. Last week we went out for sushi and this week we decided to take a ride to somewhere we haven’t been. We were going to drive all the way out to Southampton, one of our favorite spots, but after having a lazy start, we decided to go to Huntington.

My mom and stepdad have galavanted all over so they are the best people to call when we need a new spot to visit. We walked around for about an hour and stopped in at the Crushed Olive. I picked out 2 different kinds of olive oil: Basil Infused Olive Oil & Organic Garlic Infused olive oil. Both are amazing. I used the basil olive oil in a simple salad I made yesterday.

For lunch we went to Besito. OMG it was good. They immediately brought out warm chips & fresh salsa. We ordered the guacamole, which was made fresh in front of us. We also had the ensalata con frutas and tacos mixtos. We were planning on splitting both, but I honestly ate so many chips, salsa and guacamole, I could barely eat anything else. Best part of meal, it ended with 2 Mexican worry dolls and 2 warm churros!

Dinner was also special since I declared on Friday I’d be making calzones on Sunday. I WISH I took better pictures and/or a vlog because this was so amazing. I did none of that because we were all hungry, hungry people by 7pm last night.

So there are my weekend highlights, but I promise to remake the calzone so I can show you how I did it. It was pretty perfect.

What was the highlight of your weekend?

Even though you went to bed early, it still sounds like an action-packed weekend.
Glad you had a good one, Nicole.
PS: An olive oil store just opened up in our town, too–I’m amazed at how many ways they can infuse it :)

I’m sure that you are enjoying the warmer weather. We are currently experiencing Autumn here in South Africa. Not my favourite :(
The foods that you had over the weekend, looks so yummy.
