Quinoa Stuffed Red Peppers!

I made the BEST dinner last night. I made quinoa stuffed red peppers based on a recipe I saw in this month’s SHAPE magazine. I was even more excited when red peppers were on sale at the grocery store this week because I saved a couple of dollars. I made the stuffed peppers with a simple chicken dish. (Chicken cooked in low sodium chicken broth with garlic and mushrooms.) They were SO filling that I couldn’t even finish mine! (Don’t worry Danny did!)


So here is the recipe (my version):

Ingredients:
2 red bell peppers (one for each person, I need two for Danny and myself)
1 10 ounce package frozen shopped spinach, thawed and drained
1 15 ounce can small white beans, rinsed and drained
1/2 cup grated part skim mozzarella
salt and pepper to taste
1/2 cup dry quinoa

Preheat the oven to 450 degrees. Follow instructions for the quinoa on the box. (Usually 2 parts water, 1 part quinoa.) Remove the pepper tops, stems and seeds. Bring a large pot of water to a boil. Add peppers. Boil for ten minutes and drain. In a large bowl mix together spinach, beans, mozzarella, salt and pepper. When the quinoa is finished add it to the bowl. Mix everything together. Place red peppers standing upright in a baking dish. Fill peppers with mixture. Sprinkle additional cheese on top. (If you would like more of a crunch you can add breadcrumbs to the top as well.) Bake for 20 minutes or until tops are lightly browned.

These are amazing and have tons of health benefits. Red peppers are loaded with potassium, antioxidant beta-carotene and have twice the recommended value of vitamin C. The stuffed peppers are also filled with fiber because of the quinoa (which is also considered a complete protein) and beans. Enjoy these stuffed peppers as a side dish, or let it take main stage! Try these, they will NOT disappoint.
