SoulCycle, Health Coaching and a Kitchen (sort of) Fail

I’m so glad that you all like my new site. I’m trying to figure out wordpress, it’s super different from blogger and I can see why it’s so much better. So bear with me until I get to know this thing well.

On another note, yesterday I had a busy day. I know it was Friday the 13th, but I always kind of consider that a good luck kind of day for me. Ya have to think positive right? I was heading into SoulCycle so at the last minute I decided to take the Long Island Rail Road. I basically ran to the train in flip-flops, which is never good. I did make it although I was pretty out of breath. I walked around because I got in early and went to Whole Foods. Why I did think, I don’t know. I “had” to pick up  a couple of things, but it translated into me carrying around a really heavy bag the entire day. I was pretty psyched because I found spring roll wrappers. I was not psyched to find out they were called “skin”. Gross.

I took a 1:00 SoulCycle class. It was not my favorite, but I kind of figured it would be like that since there were only 4 people in class. It was still a great workout, it just had way less arms then usual and the last song was 10 minutes long of a flat ride. By that time I was spent and I needed something else besides a flat ride to get me through. I desperately wanted to sit down and call it a day, but instead  I just cursed to myself and pushed through.

After SoulCycle I hopped in a cab to go to Soho. I took a cab because I had no clue how to get there and my GPS (husband) wasn’t picking up the phone. First stop was Lululemon to check out their awesome workout gear. I tried on a couple of pairs of pants but couldn’t justify the $80-90 yet so I bought a really cute workout tank.

After Lululemon I walked around and went to JCREW, where I couldn’t find anything. I’m just not ready to buy Fall clothes and that’s basically all they had. Give me a couple of weeks, but so far my JCREW bill for the month is $0, rare occasion. I also went to a couple of stores, but didn’t buy anything. I went into Sephora to get some Bare Essentials moisturizer, but once I saw the line I high tailed it out of there.

When I got home I had more good things. For awhile I’ve wanted to do something in the field of nutrition. You all know I’m passionate about health, fitness and eating well. I have been contemplating how I could incorporate that info my life and help people at the same time. I haven’t officially revealed it on the blog yet, but after some soul searching, researching and talking to other members of the blog community (thanks Christie!) I decided to enroll in the Integrate Institute of Nutrition to be a Holistic Heath Coach. I start October 13th in the distance learning program and will be done in 12 months. After 6 months I can start to take on some clients, which is amazing. I won’t be leaving my day job, which is teaching, but this is something I can work on part time, for myself. I am really, really excited about it and I hope you are too! Anyways, I bring this up today because I got a package from them that has my iPod in it, where I will be listening to the classes.


Awesome right? So when you all need a health coach, I’ll be your girl! :)

To finish off the night, since Danny got home pretty late from work, I decided to work on muffins I had to make for my sister. She has been interning at MTV this past summer and wanted to do something as a thank you for them. I was volunteered to make muffin tops for her office so i got to work on those and packaged them up. I made corn muffins, brownie muffins and peanut butter chocolate chip muffins. The pb chocolate chip muffin tops are vegan (used 2 flax eggs), shhh don’t tell. I don’t think anyone will notice.

To end this very long post, I will share with you a sort-of recipe fail. I attempted zucchini mini loaves the other day and they were kind of a fail. I don’t hate them, but I don’t love them either. I needed to make the zucchini WAY, WAY finer and smaller. I used my food processor to cut it up and that’s where it started to go wrong. I’m sharing with you the recipe, because the base of the recipe is good, but it just needed to be perfected. Not everything I make is great the first time just most of it.

Love the new look! I have considered Wordpress too. Can’t wait to see your thoughts on it! The Holistic Health Coach thing sounds interesting. I am always trying to find my way to helping people when it comes to cooking and food. Sounds like a fun way to integrate your passions! Have a great afternoon! Oh and Nicole, there are always fails in the kitchen. After I have a failure, it helps me figure out a better way to do something.

Love your new blog look! I’ve had lots of failures in the kitchen, the most recent was a peach sorbet I messed up. That’s the only way we can learn, right?

Love the new look of the blog. It’s gorgeous! ReviveMyBlog does some amazing work I’ve noticed. I need to get in on it. If only I had the money. LOL

How cool to do the wellness coaching training. That sounds fabulous.
