Early Bird Gets The Worm…

My veggie quiche went from this…

To this… in no time at all…

Sad that the window sill is the only place I can find natural light. Happy that this was at about 5:15.

I made a very veggie quiche again, but this time I used two sweet potatoes, baby bella mushrooms, lentils and carrots. I used what I had in the fridge and cooked everything the same way. I also doubled the crust this time because why wouldn’t I want more of that? We ate 3/4′s of the quiche Tuesday and I finished off the last quarter long before Danny got home.

I semi felt bad I ate the rest of it, but then I remembered I was the one that put in the labor of love to make it. Danny worked late and ended up with some baked pasta. I have been trying to pick up some of the slack in the kitchen since he’s working late…so that means cooking, cleaning AND eating all of the leftovers. I say it’s a fair deal…he may object.

What are you favorite leftovers to eat? This is up there for mine. Please try and make this vegan quiche, it’s so delicious I can’t take it.

I love pasta leftovers — and anything spicy! Plain foods are fine the first time around, but to reheat something bland (potatoes, eggs, etc.) — not my fav. Of course, pizza is probably the leftover to beat all others!

The window sill is about the only place I can get natural light too, so no worries. ;)

I can’t wait until daylight savings time so that we can have more light for our pictures!

I’m sure I would have hoarded those leftovers up, too… the quiche sounds delicious!
