Broiled Eggplant Open Faced Sandwiches

by Nicole on March 30, 2011

Work woes. We all have them. I’m certain some are worse than others. I don’t really talk about work that much because I try to focus on the positive aspects of it, like the 27 kids who look forward (mostly) to seeing me everyday. And the fact I get a paycheck regularly and my health insurance is pretty good.

Yesterday was a not so good day…which has kind of been happening a lot lately. The state of the education system weighs on me heavily each day…enough said.

What to do when you have a bad day? Well, since I gave up shopping for Lent, I hit the gym. I decided to do a 45 minutes solo spin session. I haven’t been on a spin bike since pre-surgery in December, so I just decided to wing it. I went with the music and just did whatever I felt like. It felt good.

After the gym, I came home to new running sneakers (YES!) and the daunting task of making dinner.(I know you love my pj’s.)

I flipped though a cookbook real quick, saw the name broiled eggplant and went with it. 10 minutes later I had broiled eggplant open faced sandwiches.

What do you do when you have a bad day at work?

Whenever I have a bad day at work a good sweat session usually cheers me up. If that doesn’t do the trick, a glass of wine ALWAYS works : )

A good old sweat session is always great after a bad day. I like to take a long walk with my dogs too…that always raises my spirits :-)

I’m sorry you had a bad day. I like to take a bath after a stressful day.
