Cooking in a Cabinetless Kitchen!

Morning! It’s almost the weekend again, how does that happen so fast?

This weekend is bringing lots of exciting things, like floors, cabinets and maybe even appliances. I’m keeping my fingers crossed that I may have what looks like a real kitchen before the end of the weekend. Oh and there is also something called the NYC marathon that we will be watching to support my friend John. Very exciting weekend! :)

I haven’t been making any quality recipes in my kitchen, I’m just trying to throw together meals. They all taste good, but most of the look not that appetizing, like my polenta, lentil, spinach and broccoli slaw stir fry last night, topped with bruscetta. Delicious, but not to the eye. I spared you all, don’t worry.

Sunday: eggs

Monday: Kale and white bean salad with leftover sweet potato lentil chili

Tuesday: Pan seared tuna on barbeque & salad (loaded the sushi grade tuna with salt & pepper and some olive oil and cooked it for 3-4 minutes on each side on grill.)

Wednesday: Danny had eggs, I had polenta, lentil, spinach broccoli slaw stir fry. Random, but what was in the fridge.

Not one day of take out yet! Feeling very proud of this. As I was talking with one of my most favorite people last night, food we make at home just tastes better AND you save money. I really try to convince people that after you get used to eating food from home, you will start to want and crave home cooked meals…and your wallet will thank you!

On another note, today is day 8 of no coffee for me. I’ll have to do a post about giving up coffee (temporarily) to share what I’ve been going through….sorry to sound dramatic! haha

I’m off to do work and eventually go for a run and tackle day 60 of Jamie Eason’s program. It’s kicking my butt. I almost cried and gave up yesterday when it came to doing 30 burpees. I pushed through and got it done…not happily though.

What have you pushed through lately? For me it’s been not drinking coffee and this workout program!
