Irish Soda Bread!

Morning! Hope your weekend left you with lots of energy, despite the loss of one hour of sleep. I’ll lose one hour to gain more day light, sounds good to me. But then again, I’m not really lacking in the sleep department, like some of you Mommy’s!

Yesterday we had a very productive day. Danny and I rocked 8 miles (and walked about 1 more). I think I’d be ready to do the Brooklyn half now, if I had to. I’m glad I don’t and I have more time to train, but I felt really good most of the run. The first 20 minutes are always the hardest for me, until I get into a groove. After we got back I did some major stretching and a couple of sun salutations to really loosen up my tight muscles.

I went to Trader Joe’s and spent a boatload of money. It seems like I needed every nut, nut butter, vegetable and baking item under the sun. Besides all the usual supplies I go for, I was going for the ingredients for Irish Soda Bread. I make it every year, but this year I bought Irish butter. (I can’t remember what blog I saw Irish butter on that inspired me to buy it…if it’s you tell me because you gave me inspiration!!)

This recipe is so easy, you have to make your own! I figured if I posted it today, it’ll give you guys a couple of days to get the ingredients and make it!

It has been so long since I made irish soda bread. I need to get on it though, I just couldn’t do the raisins since Jay would not eat it. I think that may be why I haven’t done it. Yours looks delicious!

Great recipe for St Pattys Day! I have NEVER had or made soda bread before. I don’t even know what the deal is with it? I mean, it doesn’t look like it’s made with soda (just baking soda)??? Delish looking, don’t get me wrong. Just am clueless on it other wise!
