Spring Salad: Lime, Avocado & Tomato Salad

Morning!

Who is ready for warm weather here in NY? I know, that’s all everyone & anyone is talking about…but come on…it’s exciting!

In some other news, yesterday was my 700th post. I just realized when I signed into my dashboard… I wonder how many hours of blogging that actually is. A lot.

My food has been so all over the place lately and I’m sure you can tell. Less blogging recipes and more other stuff.  Hopefully that will change soon, but I do have a delicious salad to share with you today.

It’s perfect for spring and this gorgeous weather we’re having. It’s super easy and you really don’t have to measure anything. My kind of recipe. Also feel free to sub chickpeas for black beans if you don’t have any.

Next up? I plan on making some ice cream in the next couple of days, so I’ll let you know how that goes! My first time making it was a MAJOR fail.  Anyone have a great recipe to share?

Getting some work done and then when the sun comes out, I’m off for a RUN.
