Chocolatey PB banana “ice cream”!

Happy Friday! Another week that has flown by and we are that much closer to our vacation! This morning we went to the gym, I went to spin and did a quicky weights workout. Today is my co-teacher’s birthday I work in  a collaborative teaching classroom) so I made some cookies that I am bringing in for the teachers at lunch. The kids are so funny about birthdays, they want to be super secretive, when really we know what’s coming. They planned her party all week and are very excited about it. Today they will be all giggles all morning, which is pretty cute. 


Last night I made a one dish dinner. I haven’t been making too much meat since I haven’t been eating it, so Danny’s sorta been missing out. I have been making dishes with fish,beans,eggs, etc but last night I felt like I should make him some meat. I threw in 2 chicken breasts, 1 can TJs fire roasted tomatoes with green chilies (HOT!), 1 can cut up artichoke hearts in one corningware. I sprinkled some balsamic vinegar, sea salt, black pepper and basil over it and stuck it in the oven for 40 minutes at 350 degrees.  For me I had a salmon burger, salad with avocado and black beans, leftover quinoa and some eggplant slices I stuck in the oven. I LOVE having leftover rice and quinoa that I can just reheat whenever throughout the week.

Dessert was my specialty (again) last night. On twitter there was some talk of soft serve banana being easily made from just a frozen banana, so I had this in my thoughts ALL DAY. I threw in a cut up frozen banana, some crushed ice and a little splash of milk. I (actually Danny did it) used the immersion blender and blended it up well. I then added 2 tsp of cacao and a small spoonful of peanut butter and mixed it again. WOW. This is really amazing. I couldn’t believe how sweet, creamy and chocolaty it was without even adding any sugar/agave. This was perfect for my dessert. I thought it was so amazing that I made Danny try. He thought it was gross haha. He hates banana and while I thought it just tasted like chocolate and pb, he could taste the banana. It was pretty funny. He hated it so much he had to eat 3 of the cookies to make his mouth taste better.

Chocolate Peanut Butter Banana Ice Cream (long name…)
- 1 frozen banana (cut into pieces)
- 2 tsp Hershey’s special dark cocoa (or regular cocoa)
- 1 tsp peanut butter
- 1/2 cup crushed ice
- cacao nibs (for garnish)

Blend banana with crushed ice with immersion blender or with food processor. Add cocoa. Mix again. Add peanut butter and continue to mix. Add cacao nibs on top and enjoy!

can’t forget the cacao nibs on top!

I have had this frozen banana dessert thing in my mind too and I have not been able to make it yet!! ERG! I just purchased some cacao nibs this past week and looking forward making this recipe here! Thanks!!

I love how frozen fruit can be turned into an ice cream dessert. This combo sounds so great! I make blender ice cream with frozen mangoes, they are another good one to use along with bananas.

oh the ice cream turned out awesome…good to know with an immersion blender that it totally worked!

i make it with 2 frozen nanas in my Vita, splash of almond milk, sugar/stevia/agave to taste but
