Acai Sorbet with Cacao Nibs

Good morning! I love Thursdays because it's the one day out of the work week that I sleep semi late. I usually sit on the computer and get to work at the same (not early) time. Yesterday was another nice weather day and I hope this becomes the norm rather than a rarity. It was brought to my attention that there is ONLY 15 weeks of school left until summer..is it too premature to countdown from now?? I'll stick with counting down to Costa Rica for now. (Less than 3 weeks!)


Yesterday I woke up before my alarm (ugh) at 5:45 because I had really bad heartburn. It probably was from the random combination of desserts that I ate WAY too much of the night before. I usually don't overeat desserts, especially during the week, but I don't know what got into me 2 nights ago. I was just dying for chocolate and needed it in 3 different forms.  So after downing some tums I laid there couldn't fall back asleep, so it was Jillian's No More Trouble Zones for me. After she kicked my butt for 45 minutes I had some coffee and got ready for work. 


Dinner was just unpictured omelettes. Danny had a filling replaced, so I didn't know how much his mouth would hurt for dinner. Mine has mushrooms, black beans, leftover quinoa and zucchini. Danny's just had mozzarella cheese. 


For dessert I decided I was NOT having cookies OR ice cream OR brownies. I opened the freezer to see an acai packet, so I went with that. I wanted to kind of make an acai bowl, sorbet thing. I think it worked out well. 


ACAI Sorbet with cacao nibs
- 1 packet unsweetened acai
- 1/2 frozen banana
- some ice (next time I'll use crushed)
- squirt of agave nectar
- a handful of cacao nibs for garnish


I put everything in the cup that comes with the immersion blender and blended. Then I put the cacao on top! SO good. I ate half, put the rest in the freezer and then went back for the rest. This was a cool and creamy dessert, with no guilt! I felt MUCH better after eating all of this, verse the night before. 


While I was eating this yummy dessert, Danny was torturing me by eating these white flour filled cookies. (* I gave up white flour for lent, otherwise I would be eating one of these!)

You just reminded me how much I miss acai! We had it all the time when living in Brazil. I really need to try to find these frozen packets around here.

I love homemade ice cream. We have the countertop Cuisinart maker and it is so easy use.

Your sorbet looks so yummy and refreshing. Never made home made ice cream, I wish I had an ice cream maker.

Yum - that looks so great! I've only ever had the acai powder - would love to find some of that puree. I've never made my own sorbet, but was big into freezing greek yog for a while as a quickie "sorbet" - I'd take it out before it got hard. I've been meaning to try the quick banana thing, too.
And also, question for you - you came right to mind when I was thinking about this! Have you ever made your own english muffins? I'd love to try making my own WW muffins, and would REALLY love to try making Spelt ones! Wasn't sure if you might have some thoughts :) I'm pretty experimental - but I've learned my lesson that yeast is not for experimenting as much, lol.

I haven't made my own homemade ice cream since I was a kid. We used to have an ice cream maker and every summer when we would go to our beach house we would make fresh ice cream...my favorite was always peach ice cream made with REAL peaches. So good...oh you are making me crave some right now!!

the sorbet looks great but i am a choc chip cookie lover of the biggest kind so those look reallllly awesome to me!

being adjusted in yoga...honestly, it's the newer people & beginners that it really benefits b/c it helps you feel where you "should be" and then on your own you can emulate where the teacher "put" you if that makes sense :)

Isn't acai the best thing ever!!! I feel in love with it while visiting Brazil. It's so amazing when it's fresh, blended with banana, and topped with granola and banana slices. I love the idea of topping it with cacao nibs. What a lovely dessert idea :) I hope I can find frozen acai when I return to Canada.
