Need Energy? Try Pumpkin Pie Chia Pudding!

by Nicole on October 19, 2011

I haven’t been doing WIAW, mostly because I forget to take pictures of all my food. I’ve never been a blogger who does that, so it’s strange for me to remember to take a picture of everything I put in my mouth.

While I do like to do it every once in awhile because I can show my clients how much I actually eat, I kind of forget a lot too. My daily food is really not that exciting anyway, so I don’t feel the need to remember every week. I eat the same thing for breakfast basically everyday. I’m boring or…awesome that way? I haven’t decided yet.

Lunch was a black bean & salmon salad over greens. I had some hummus and carrots too. Boring. I did remember to take a picture of lunch…but that’s it. Want to see?

Dinner, forget it. No picture. Not even a thought.

But dessert, it was so good, I had to share it on Instagram.

Enjoy for dessert OR for breakfast AND feel good eating it!

Don’t forget about all of the benefits of chia seeds like:

  • chia is a complete protein & filled with vitamins and minerals to keep your energy levels up
  • high in anti-oxidants
  • filled with calcium & omega 3′s
  • helps balance your blood sugar

Awesome right?

Have a wonderful Wednesday! I’m off to workout and meet with clients!
