Citrus Marinade and a Happy 4th!

Morning bloggies and blog readers! Happy Tuesday! I keep forgetting it's Tuesday and think it's Monday. Anyone else doing that? 

Well today is going to be a scorcher at 100 degrees. I plan on staying inside and staying cool, not doing much today at all. What is everyone up to?

I had a great weekend, filled with lots of barbeques and family time. There was a ton of food this weekend, so I wasn't surprised when I woke up not that hungry because of all that was consumed. 

For our first barbeque we started out with sweet potato fries, grilled brussel sprouts and mushrooms and marinated tuna and shrimp. I cut the sweet potato fries bigger because I didn't want them to fall through the grill...which they did anyways. 


I marinated the tuna and shrimp for about 2 hours, letting it absorb all of the flavors.

Citrus Marinade
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
large handful of parsley
sea salt and black pepper to taste

Let marinate for 1-2 hours in the fridge, turning and stirring occasionally. Grill tuna and shrimp for 5-7 minutes on each side.

I loved this marinade because I usually use balsamic vinegar and/soy sauce as my base for a marinade, but this was very summery and refreshing.

On Monday we also had another barbeque. This was a little bit ridiculous with the amount of food we had. Most of it very healthy with the small exception of a couple of things, that of course, when eaten in moderation are great to have at barbecues!

salmon, steak, salad ( I think I ate 1/2 the bowl...and then went back for most at 8pm) and macaroni salad. (Unpictured chicken.)

I absolutely love, love, love cooking for others. I also made my tarts for dessert. 
I could really see myself cooking for others making dinners, help plan meals, or doing parties, on a small scale. Between helping my mom at her dinner party last week, helping one of my friends plan a menu for a bridal shower and yesterday, it's been so much fun!

What an outstanding looking meal! All of it looks so fantastic. Last time I tried to cook sweet potato on the bbq it went all mushy...going to try to do it in thicker pieces like you did next time.

Never seen that Skinny Girl before...but I love me some margaritas...looks great.

Everything looks wonderful! I also love cooking for others. When I threw my hubbys bday party I was so excited about everything even though I was stressing out!

Everything looks delicious! The marinade sounds very refreshing! I will have to give that one a try. So glad you had some relaxing fun. I love planning menus too! Definitely on the smaller scale though! Stay cool inside today!

I can't believe the heat either! At 8am I was running in almost 90 degree weather and I was feeling ehhhh the whole time!

Looks like a great fourth! Some yummy bbq foods you had there :) The shrimp and tuna looks great, especially with that marinade!
