Hi! Welcome to my little blog, Making Good Choices. My name is Nicole and I have a passion for cooking, baking, eating and living a healthy life. I have many titles in my life, but my day time job is a 4th grade special education teacher in NYC.  As soon as I race out of work everyday you can be pretty certain to find me in one of the following places: the kitchen or the gym (or the couch if I am blogging/catching up on the DVR).

I started this blog in August after getting a boatload of emails and phone calls from my sister and mom about recipes/tips/meal ideas. My sister decided that I should do this as a way to keep track of recipes and tips that I have accumulated over the years. This past summer I finally had "me" time, which was unlike the past couple of summers when I was in grad school and/or planning a wedding. I spent a lot of time over the summer cooking, baking, running, exercising and spending time with my family and friends. After the craziness of the school year, I really forgot how much I really, really have a passion for cooking, baking and just, over all, living a healthy life. Yes, I always tried to incorporate healthy living/eating/working out into my everyday life but it was on auto-pilot. After having time off I realized how much I LOVE all of those things and being able to share it with others, which is where the blog was born. While it is a big undertaking to blog everyday, I find it to be a huge stress reliever and release and also a great way of communication with other people who enjoy the same things as you! I have learned SO much from reading other blogs and have expanded my repertoire of foods over the past 6 months.

I try to eat a well balanced diet. I don't swear off anything, but I tend to (mostly) stay away from things like fried foods and red meat. I enjoy eating whole grains and lots of veges/legumes and lots of fish. Since the new year I am trying to eat more whole grains and stay away from white sugar and flour, but clearly there are exceptions to every rule! I love working out and trying new classes and exercises. When the weather is warm I try to take advantage and go for runs with my husband once or twice a week. I try to weight train 3x a week and spin 1x.
