Sweet Smashed Potatoes and a FREE Sugar Workshop!

Happy Friday!

Yesterday I got in a 5 mile walk/run and it was the furthest I’ve run in almost 3 months. I ran 3.75 miles, and took walking breaks every 1.25 miles. I’m getting back into running slow and steady (from a long bout of runner’s knee). I DON’T want to push it, so I’m adding mileage slowly. I’m not complaining because I’m really hoofing it now, feeling pretty out of running shape, but still loving every second.

After being 2x injured and having (unrelated) surgery, in the past 6 months, it can feel like you are never going to get better from an injury. I really can’t stress enough how much time off and rest helps recovery. It’s so easy to not want to rest and I’m guilty of doing it, but after taking weeks off from running, I can see how much better off I am. (Also I’ve taken a lot of time to examine my foot strike and running, but that’s a post for another day.) So word to the wise: if you are in pain from running or another sports related injury, take time off! The world won’t stop if you don’t run for awhile. End rant.

When I got home yesterday I did some work for health coaching. I’ve been catching up on Integrative Nutrition podcasts and getting really excited to get more health coaching going over the summer. I took mahi mahi out for dinner and had leftover brussel sprouts, but I needed to make something else, mainly for Danny, on the side. Usually I make sweet potato fries once a week, but the oven was NOT going on in 100+ degree weather. So….smashed potatoes it was.

Ingredients

Smashed Potatoes (for 2)

  • 2 sweet potatoes
  • 1 tbsp butter (I used Kerrygold)
  • sea salt, black pepper

Poke holes in sweet potatoes. Microwave sweet potatoes (wrapped in paper towel) until cooked, about 7-8 minutes. Smash them in a bowl with a fork and a knife. Mix in butter, salt and pepper to taste.

Seriously, so easy. I don’t always like to use the microwave, but it comes in handy with super fast dinners with little clean up. I leave the skin on because I like the taste of it, but you could remove the inside from the sweet potatoes if you’d like too. Sweet potatoes are a great source of beta carotene, vitamin A, vitamin C and antioxidants!

Going slow is definitely the way to go after an injury. Good for you for getting back out there!!

I had mashed sweet potatoes over the weekend and they were delicious but I’ve never tried to make them before. I had no idea they were that easy!
