Fridays and A Socca Revisit

by Nicole on February 11, 2011

I love Fridays.

Fridays mean I only have to work until 2:40.

Fridays mean I go to Trader Joe’s and buy copious amounts of things that are always in my pantry. Don’t tell my husband. Oh wait, he knows. (Why do I buy almond and peanut butter like it is going out of style?)

Fridays mean I can have a (third…yikes..) cup of coffee when I get home and not worry if I’ll fall asleep or not.

Fridays mean I sit in front of the TV with no responsibilities or care to cook dinner. I also read blogs until my eyes feel like they are going to bleed.

Tell me I’m not alone here.

Yesterday I ran a 5k on the treadmill. It was very slow, but I still feel accomplished and excited I could run it straight through with no ankle pain. If I add 1 mile a week-ish I’ll be ready for the 15k. I need to map out a better training plan for that and the half, but that’s my idea for now.

Have a wonderful Friday!

If you do one thing this weekend…try socca. I made it last night, stovetop.

pan I used

I cooked these just like I cooked pancakes. I waited for it to very lightly brown around the edges and bubble in the middle before I flipped it. I ate this by itself and Danny ate it with butter. Both delicious.

What’s your favorite thing about Friday?

Hoorayyy for Friday!! I have a TJs visit planned for later as well — we usually go on Saturdays, but we have a lot of plans this weekend and need to make it a Friday activity. I don’t mind one bit!

My favorite thing about Friday is enjoying another cup of coffee too! I try not to drink too much during the week so as not to disturb my sleeping habits…but come Friday…bring on cup #2!!

Hi … found you via twitter or another blog, not sure but have enjoyed exploring your site.

As for Fridays … I get a massage today!! And I need it right now as my beat-up body is complaining about my half-marathon training.

Enjoy your Friday! I think mine is going to go too fast. I have a lot to get done…yikes! I love socca! Chickpea flour makes the best waffles too since they get all crispy. Your socca looks delicious. Have a great day sweetie!

I’ve yet to make socca on the stovetop– the oven is so easy! But I’m going to give this method a try soon!

I am right there with you. I never cook dinner on Fridays, and don’t worry about going to bed early! Thank you for the socca reminder… I really have to give it a try!

YAY Fridays! There are so many happy things listed in this post! :)

I especially love Fridays ’cause I don’t work on Fridays so it’s like an extra day to the weekend! :D

My favorite thing about Fridays is taking a long, not bubble bath.
I’ve never heard of socca. I’d love to try it!

I love Trader Joe’s also. I never had been to one before we moved to California but it soon became one of my favorite stores. So glad before we moved that Nashville got one so I can still enjoy shopping there.YEA! I have never tried socca but you made it look and sound so good that I am excited to try it.

I’ve never tried socca either, but it looks easy and delicious. I’d imagine that the garbanzo bean flour has a good protein content too! YUM!

I get Fridays off, so that is my favorite part about it! :) But I feel the same way you do – I can stay up later, relax more, and just do whatever I want! :)

As a teacher, you DEFINITELY deserve that Friday break! :-)
I am glad to hear your ankle did not cause you too much pain on your run!
Thursday evenings (if I am not incredibly dead from being up since 5:30am) I do my blog reading. Sometimes I do it throughout the weekend as a form of a break in between studying.
Have a wonderful weekend!

My favorite thing about Friday is sleeping in the next morning and, of course, having the liberty to try many of my favorite, more time consuming recipes! This weekend I’m trying socca finalllyllylyly
