Recent Recipes in the Kitchen: Combining Hummus & Guacamole: Guacahummus

by Nicole on December 7, 2011

Morning! I’m up pretty early today to get my day started, get ready for clients and to do some work. I may even take koga this morning if I have time.

I got up at 5:30 with Danny’s alarm but couldn’t bring myself to get out of bed until after 6. It is to early for breakfast and coffee right now? Because I woke up hungry. Sometimes I feel like the earlier I wake up, the hungrier I am….anyone else?

In the past couple of days I have been getting back into my cooking groove. (YEAH!) I no have two ovens which is awesome when I want to make two different dishes at two different temperatures. Or if I want to make a dessert and a main dish at the same time…which is more likely the case.

I’m not fully into my cooking groove, but I finally made some fresh hummus, which I haven’t done in months! Fresh is always better than store bought, don’t you think?

Sunday we wanted to guacamole, but with no ripe avocados (except one!) at Trader Joe’s we decided to make guac-hummus. So good.

I love making hummus because it’s one of my staple snacks. I’ll snack on it with some carrots, Mary’s Gone Crackers, tortilla chips or throw it on top of my salad. It has pretty good stats too and has plant based protein. Winner. It would be better if we could get some sunlight and I could actually take some decent pictures though.

I also made a very yummy carrot ginger soup that I saw from Integrative Nutrition, which got it from Eat, Live, Run.

I made it a little thinner by using 4 cups low sodium chicken broth and instead of mincing the ginger, I used my microplane grater. It really is an amazing warming soup. Yum.

Now I need to get ready for my holiday cookies, which I haven’t picked out. If you head over to Brittney’s blog, she’s doing 12 days of cookies right now and they all look amazing. I have my eyes on a couple of those.

Things to read & watch!
