Pancakes and Saturdays



Good morning! I am already loving this Saturday morning. I've been up for awhile trying to research vacations in February. I know, we are ridiculously a little bit last minute her considering it's in less than a month. We weren't going to go away, but we both decided we need a little get away. We aren't sure where yet because it has to be quick and not that expensive, but we both really want to go to Costa Rica.  I've figured out a couple of things, so after I wake prince charming, I'll have to see if it works out.  :) 


Yesterday I had a great Friday. We tried out a new lunch place called PURE at work that serves all healthy foods. I was getting really sick of my Greek salad that wasn't anything close to special so I was happy. I had a great salad that I asked them to put together with black beans, feta, roasted red peppers, tomatoes, carrots and hummus. It was REALLY good.


Is anyone having a special breakfast this morning? Danny and I love to have pancakes not only on the weekends, but for dinner sometimes too. I posted another pancake recipe that I used to use, but I found a new one that I am loving. I found it in one of my new fav cookbooks (the Eat Clean Diet cookbook) and I changed it around a little bit. 

The original recipe doesn't call for any flour, but I wasn't sure Danny would go for 100% oatmeal so I did half and half.  The original recipe calls for 6 egg whites, but I didn't have that many eggs so I just used 2 whole eggs. Also I swapped wheat bran for wheat germ (because I didn't have wheat germ) and skim milk for cottage cheese and I left out protein powder because I don't have that either.


Ingredients:
2 eggs, beaten until fluffy
1/2 cup organic skim milk
1/3 cup oatmeal, uncooked
1/3 cup whole wheat flour
1/4 cup wheat bran
1/4 cup flax seed
1 tsp baking powder
1 tbsp canola oil
1/2 tsp cinnamon


1. Place all ingredients in a food processor except the eggs and pulse until it's uniform. 
2. Pour blended ingredients into a bowl and add eggs. Mix together.
3. Heat a griddle with cooking spray (I like organic olive oil spray). Ladle pancake mix onto griddle and cook until both sides are browned.
4. Enjoy with jelly, jam, a bit of butter, maple syrup or agave nectar.



So good. It has a wonderful nutty texture and they are super healthy filled with fiber and protein!




Dinner for me - scrambled egg whites, roasted balsamic veges and pancakes!


Try out these pancakes for breakfast, you will not be disappointed! Enjoy the 3 day weekend! Make good choices!

Get way is always good regardless of the month, Have fun in Costa Rica. I love to have breakfast for dinner. Why not? Right? Your pancakes

Yummy! I do a similar pancake recipe that uses 1/3 cup cottage cheese, 1/3 cup oats, 1 egg, 1/4 tsp baking powder all blended up. Good stuff!

Get coffee if you go to Costa Rica LOL!
