Super (Sweet) 16 Bean Soup

YES! I am one happy girl/teacher/wife. I got word from another teacher who came in around 11:30 that NYC schools were CLOSED tomorrow because of the snow storm. NYC barely ever closes schools so the fact that they closed it the day before was basically unbelievable!! We were able to keep it from the kids until after lunch when the principal made an announcement. They were actually surprisingly good about it and stayed pretty calm until dismissal. Tomorrow I have serious plans to watch all hours of the TODAY show from the time I wake up until the time it end. Oh and don't forget the coffee I will be drinking!

Now onto the recipe...I made this soup over the weekend. 
After all of this cold weather, I was really wanting some soup. I bought a bag of Goya dried 16 beans about a month ago and hadn't had a reason to use it...until now. I hadn't used this type before to make soup, so I referenced the recipe on the bag. I boiled the beans for an hour in 6 cups of water. I wasn't sure if I would have to change the water, but after a half hour of boiling and the water turning BLACK, I knew I had to. I let it cook for a total of an hour and then drained and rinsed the beans. I put the beans back in a large soup pot with 10 cups of low sodium chicken broth. I also added one can of the 14 oz petite diced tomatoes.


This is a hearty, filling meal filled with fiber and protein, not to mention it is friendly for those of us on a budget!


16 Bean Soup
Ingredients
1 bag (1 lb) 16 beans
1 14 oz. can petite diced tomatoes
3 stalks of celery, cut into small pieces
2 large carrots, peeled and diced
3-4 stalks kale, taken off the stalk and cut into small pieces
1/2 white onion, diced small
sea salt and black pepper


1. Boil the beans in 6 cups of water for an hour in a large pot.
2. Drain and rinse the beans.
3. Add 10 cups low sodium chicken broth. Add the diced tomatoes. Cook on medium for 15 minutes.
4. Add the carrots, celery and onion.
5. Sprinkle salt and black pepper.
6. Serve hot.


This makes a nice, big pot of soup which I was glad because I love to have leftovers for the rest of the week.  Sometimes when I am impatient hungry before Danny gets home I will have a snack, so this will be perfect for before dinner.

Best job in the world when you have snow or hurricane days lol oh well. The soup is great, as usual, glad you have time to cook more for us!!!

Oh what a great soup. Too bad my guys don't really eat soup otherwise I'd be serving this PDQ!
