Peppermint Bark!

Oh HAAAPPPPPPPYYYY FRIDAYYYYYYY!! I am SO glad it is Friday and the weekend is here....in about 8 hours. I have been going crazy with Christmas between baking and cooking and shopping and cleaning and everything else. I have been making list after list of things I have to do and the top of this weekends list is making chicken parm and sauce to freeze to bring to Danny's parents for Christmas.

Here is one of the easier things that I made in the past week.... PEPPERMINT BARK!

Melt the chocolate in the microwave - you can use any kind you want...semi-sweet, dark, or milk.

Spread the chocolate out on a piece of parchment paper. Put it in the refrigerator and let harden.

After the semi-sweet/milk/dark chocolate hardens melt the white chocolate in the microwave. Spread the white chocolate over the first chocolate.

Break up candy canes into small pieces. (I used the food processor or you can put it in a plastic bag and put a towel over it and hit it with a mallet.) Sprinkle the candy canes over the chocolate and press it into the chocolate. Put it in the refrigerator and let totally harden.

Break it into pieces and serve! Delish!

This is what my table looked like when I was making the tins. What a mess. Fortunately it doesn't look like that anymore!

Have a great weekend! Remember even at this holiday time, try to make a (mostly) good choices!
