Good morning! My last day off! Ahh...I got a little taste of summer with these 2 beautiful days and I am so excited for it to be here! I think today I'm going to drive out to my mom's house and go for a run out there and then sit in her backyard...since I don't have one. The sun hasn't even really come up here yet, but it's supposed to be a gorgeous day. I put away everything from our vacation yesterday, so I can do some relaxing today.
Also I went to Trader Joe's AND Whole Foods. I picked up 4 packages of organic meats for Danny so I can be semi stocked up for dinners and lunches for him. I also picked up a new type of sprouted bread from Trader Joe's and picked up millet flour to try. Anyone have any good recipes using millet flour??
I have to order more goji berries and cacao nibs, but I don't get them at Whole Foods anymore because they are way too expensive there. I order them at iHerb.com and if you enter the code
Yesterday I baked scones and muffins. While in the middle of making the pumpkin dark chocolate chip scones I realized that I didn't have any pumpkin. I just had to roll with it and make some changes accordingly.
almost looks like chocolate chip cookie pie....tastes as good, without the guilt.
Dark Chocolate Chip Scones
1 cup spelt flour
1 cup oat flour
1/4 cup Turbinado sugar
1/2 tsp sea salt
1/2 tsp baking powder
2 tsp baking soda
1/4 cup plain greek 0% yogurt
2 1/2 tbsp 1% milk (or whatever you have)
1 tsp vanilla extract
1/2 cup applesauce (generous 1/2 cup) I used unsweetened organic applesauce
1/4 cup dark chocolate chips
1 tsp milk to brush scones
1 tsp sugar (for top of scones)
Preheat oven to 375 degrees. In a large bowl combine flours, sugar and salt. Stir in baking power and baking soda. Add applesauce. Then stir in yogurt, milk and vanilla. Stir. Add chocolate chips. Stir until dough is thick. Spray a 9 inch cake pan with non stick spray. Spoon the batter into the cake pan and spread it out evenly. Lightly brush the top of the scones with milk and sprinkle it with sugar. Bake for 20 minutes until tops are lightly browned. Let cool in pan on the top of a cooling rack for about ten minutes. Use a pizza cutter to cut into 12 pieces. Remove from pan and let cool.
On a side note...did you know Mott's applesauce has high fructose corn syrup in it??? I usually don't buy it because I normally get it from Whole Foods or Trader Joe's but a couple of weeks ago I happened to just pick some up. I didn't pay attention because I was in a rush and when I got home I read the label. I couldn't believe it! You just cannot escape HFCS!!
