Perfect Peanut Butter Cookies!

Good morning and Happy Friday! I've been kind of out of commission in the blog and real world this week. I said in my last post I haven't been feeling well and after talking to people at work and some friends I think I just have a stomach bug. It's NO fun. 

I left work early yesterday to come home and rest. I hate when your stomach feels like a laundromat. Thank you for all the kind comments and advice on not feeling well. I also enjoyed reading how much fruit you all eat. I haven't eaten any all week since sour stomach does not take well to fruit. When I go back to eating it, I am definitely going to be more conscious about how much I eat. Too much of anything is not a good thing.
Yesterday I finally got a clue (because of my colleagues) and stopped eating like I usually would and just ate bread, rice, more bread, some pasta and more bread. Salads and yogurt and such were not helping my cause. So this morning before Danny left for work he made me breakfast. 

English muffin with butter and 2 egg whites.  

I have to say I haven't been eating much bread lately, so it's kind of nice to just eat bread for a day haha. Is that weird? 

For dinner last night I had soup. I didn't take a picture of it, but it was basically just vegetable broth with some carrots and brown rice. Usually my comfort food is making pastina (the little star shaped pastas) but I didn't have any, so I went with brown rice. My mom and grandma used to ALWAYS make that for me when I was sick with beef broth. It's a MAJOR comfort food for me....as well as plain Lipton tea with a ton of sugar and a little milk...currently drinking now.

I took off today because I still woke up not feeling well. I want to rest as much as possible today, especially since I have one of my best friend's shower this weekend!! (She knows what day it is, I'm not ruining the surprise!)  So I will be watching Bethanny Gets Married and Real Housewives Reunion to make my brain more mushy for some good TV. 

I'll leave you with a perfect peanut butter cookie I found the other day. I was making some cookies for the professional development day we had yesterday and for a friend at work who just told us she's pregnant! (Don't worry Danny did most of the heavy lifting so I didn't get my stomach bug on these cookies :) )


Perfect Peanut Butter Cookies

Ingredients
1 cup peanut butter
1/4 cup salted butter, room temperature
1 cup turbinado sugar (or 1/2 cup white sugar, 1/2 cup brown sugar)
2 eggs
1 1/2 cups AP flour
1 tsp baking soda
1 tsp baking powder
1/8 tsp salt

Preheat oven to 375 degrees. Combine peanut butter and butter in a bowl,  mix it on medium until fluffy and smooth. Add sugar and eggs. In a seperate bowl combine dry ingredients, flour, baking soda, baking powder and salt. Add dry ingredients into wet ingredients. Mix on low speed until combined. On a non stick baking sheet, roll the cookies into balls and place on cookie sheet. Dip fork first into water, then into sugar and make criss-cross shape on top of cookies. Makes about 30 cookies. 
* Original recipe only called for one egg, I found it was extremely dry after only one egg, so I added a second.

Sorry to hear your not feeling well, that stomach flu is going around, while I was in NY and now here in Florida...your right its no fun! Hope your back to feeling better and have a great weekend, your cookies sound wonderful!

Hope you get to feeling better so you can enjoy the weekend. My office is packed with sick people. I've never had that star shaped pasta. It sounds like fun though!

Booo!!! I Hope you start feeeling better! I hate stomach bugs! Sore throats I can handle--stomach bugs, not so much!

Oh no, get some rest and feel better today! I completely agree with you on the comfort food! When I don't feel well, I want bread and brothy stuff! I hope you get better! The peanut butter cookies look yummy!

Yummm! These look amazing - Oh! I wonder how these would taste with 1/2 peanut and 1/2 coconut butter! Maybe worth a try too? :)

Glad you are starting to feel better! Those cookies look wonderful! I love a good PB cookie but I like them plain jane (just like this)! I am not a fan of any extras (like chocolate chips) in my PB cookies!!

Get well soon, girl! Try getting some ginger, either chews or a natural ginger soda--it will help I promise!

I have actually been looking for a good pb cookie recipe to make for my grandma because those are her fave! My comfort food is definitely a huuuge bowl of oatmeal. Hope you are feeling better soon love :)

Aw, bummer you've been feeling under the weather. I HATE having a stomach in a funk, and can't imagine it for more than a day. Hope you feel better for the weekend! And no, it's not weird to enjoy just having mainly bread for a day...I've been enjoying having mainly bread for a couple weeks now :P
