Dinner Party!

Last night I had a dinner party with my family. It was small, with just 6 people, but it was plenty for my small apartment. We have enough room, but we realized we only have 7 chairs, so we had to share which was pretty funny. (Note to self...one more chair is necessary!)


After school/work yesterday I went to Trader Joe's to pick up some food for dinner and for stuff to take to Maryland also. For my family I made hummus, pizza and a big salad. I found these chips to go perfectly with the hummus. 

They were a big hit and both gone...the bags were on the smaller side though. 
Recipe for the hummus. Danny said it was the best I ever made..but he says that every time I make it.
Yum. Yum. Yum.
I also put out some celery and carrot sticks.

For the pizza dough (I made 3 1/2 pounds) I used 2/3 whole wheat, 1/3 spelt flour. (My bread maker doesn't make 3 1/2 pounds of dough at once, I made a 2 pound and a 1 1/2 pound separately.) I made 2 pizzas, one on a stone and one just on a cookie sheet. There is a big difference in the crispness of the dough with the pizza stone (the pizza stone pizza was WAY crispier!). 
1/4 veges(zucchini, mushroom, red peppers) and 3/4 tomato and fresh mozzarella
100% tomatoes and mozzarella
Organic mixed greens salad with tomatoes, carrots, sliced almonds and lite feta cheese with red wine vinaigrette (made AMAZINGLY by Uncle Tommy!)

Round 1 of my plate, plus one more slice of pizza and about 3 more servings of salad. I <3 salad. 
No one in my family knows this. 

We tried on our bridesmaid dresses, which is why everyone really came over. I just turned it into an excuse to cook for everyone. I am so excited about them, I absolutely LOVE LOVE LOVE them! My mom wants to be secretive so she didn't want me to post a picture...even though I want to...but I'll respect her wishes, it IS her wedding! I am so thankful for my family and the fact they eat my food and support my healthy-ness.

I also made 2 loaves of whole wheat bread, muffins and hummus to bring to Maryland with us that I will have to post when I get a chance. It is our twin nieces 6th birthday! I can't believe they are 6 already. Happy Birthday to Anna and Grace! Hopefully we will get in a run and maybe a little yoga before we leave (maybe not though...).  Now I have to pack and pack the car with a million snacks because you know what happens if I get hungry...fights (yes plural) break out.

Looks like a wonderful success and delicious dinner! Ha, we've had to use our medicine ball as a chair :) So with the difference from the pizza stone, it's more crispy using that or the baking sheet?

Ive been bouncing ideas back and forth about what I want to make for my b-day dinner tomorrow night...and your photos of the pizza just made my decision final. It is beautiful! I love a simple mozzarella & tomato & garlic pizza. Thank you for helping me FINALLY make up my mind! haha.

I ate hummus for the first time last night. OM Gosh, how delicious it was. Boy, have I been missing out! Copied your recipe to try out this week. Love the display. Isn't family support such a wonderfully rewarding feeling. My family is the same way. Have a great week!

Looks like fun! Lucky to have a Trader Joes so close to you! I always say that every time I get to go into a Trader Joes it makes me feel like throwing a dinner party - so much great stuff!

The dinner was awesome! I preferred the crispier crust but it didn't really matter because I ate my weight in hummus before that.

PS I'm glad my nose made a special guest appearance in the pic.

That pizza looks fantastic!! I have attempted home made pizza before but I am always disappointed because the dough never turns out just right.
