PTC and Pesto Chicken!

Today is the dreaded parent teacher conferences…(PTC)

I remember writing the same thing exactly one year ago, so I’ll spare you the sob story. I have to work until 8;30, which I know many of you have to do anyways, on normal nights, more than 2x a year.

What do I do to get ready for parent teacher conferences? Mainly, get up and go for a run. I do this to wake up and get ready for the day…and because whenever I don’t workout in the morning people tell me I look tired. Never fails. For me more sleep  = look more tired. Please tell me you know what I’m talking about. I think it’s that “I just rolled out of bed hair” and the swollen “I just woke up” eyes. Not complimentary on me.

I’m glad you enjoyed the Irish Soda Bread, my class did also. They didn’t get why it was called “soda” bread, so I had to explain it was because of the baking soda. I also had to explain those squishy things were raisins. I don’t just teach 4 subjects, lots of life lessons going on in my room.

Sunday I decided to make one of my favorite meals. (My favorite meals ALL revolve around carbs… pizza, pasta, paninis, to name a few.) I went with paninis. I threw some ingredients in the bread maker, roasted some veggies and got to work on some pesto chicken. I made the foccachia bread with 2 cups spelt flour, 1 cup quinoa and 1/2 cup brown rice flour and 1/2 cup garbanzo bean flour…I felt creative. It turned out perfect.

I love making a good pesto when I have fresh basil, so pesto chicken and pesto paninis were born.

I used this pesto with my roasted veggie sandwich with a slice of mozzarella. Can’t beat it.

Nicole! I tried the Galloway Method today on my run and it was SO MUCH better!! I ran ten minutes than I normally do :) Thanks for the great suggestion!!

I love adding spinach to pesto – I do it all the time – a great way to add some extra veggies.
